5 Ingredient Slow Cooker Pork Roast and Potatoes Recipe
Equipment
Ingredients
- 1.5-2 lb boneless pork roast
- 1.5-2 lbs small red potatoes cut into 4s
- 1/2 teaspoon garlic salt
- 1 tablespoon Italian seasoning
- 1 cup chicken broth
Instructions
- Put the pork roast in a slow cooker. Arrange cut potatoes around the roast.
- Sprinkle garlic salt over the roast and potatoes, and then sprinkle the Italian seasoning around over the pork roast.
- Pour chicken broth into the slow cooker. Place lid on and cook on high for 4 hours, or low for 8 hour
- If cooking it on low, remove the roast and let it rest for 5 minutes, then slice it before serving.

I’m anxious to try this recipe. If I use the low setting on the crock pot, do I put the potatoes in with the roast, or wait? I don’t want the red potatoes to be over cooked after 7-8 hours. Thanks!!

I think you’ll love this recipe. I put the potatoes in with the roast – they do get super soft and tender, so if you want them not cooked like that, then you can put them in whenever you think you’ll like them (probably around hour 4). Hope that helps

I am a single father and came across your recipe for pork roast–I am actually getting this ready to try for tomorrow—is there any other recipes you can give me to help me–I work very weird hours and have very little time at home with my son–he is 17 and sometimes gets picky with what he will eat–because of my hours and limited budget I need recipes that are reasonable cost and preferably in crockpot or slow cooker–my son doesnt care for cheese and I dont like tomato chunks or fish!!—any help to keep providing him with healthy meals and me being able to spend time with him is appreciated!!——–THANK YOU!!!

i have some fresh rosemary and a larger roast (about a 3# roast), with just some garden fresh russet potatoes(cut into fingerling size), and just harvested garlic cloves.
If I make in the crock pot, how long do you think this would take to cook? how much rosemary would you recommend (don’t want it too strong)? and possibly using 2 cups chicken broth appropriate?

Hi there, I’d recommend low for a bigger roast for 8 hours, that should do the trick 🙂 That’s so amazing that you have fresh from the garden potatoes and garlic! Pork roast, 2- 15 oz cans whole white potatoes, chicken broth & 1 packet onion soup mix. I did sear the edges of the roast in a pan with olive oil before putting the roast in the crock pot. I can’t wait to try it!

I looked at Safeway in the spices and could not find an Italian Seasoning…What do you use for Italian.? I am going to try this tomorrow and bought some fresh Rosemary and will add garlic, Basil, Oregano and some Marjoram, Sure hope that will works. Yours looks so good. Thanks

I’m so sorry to hear they didn’t have Italian seasoning, that’s so odd because normally there are like 5 different versions of it! The suggestions you said were great.
Usually my Italian seasoning mix is something along the lines of:
1 1/2 teaspoons dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary

What type of pork roast do you use? Would you know how to make this in an instant pot?

Hi! I use a pork loin roast. And for an instant pot..I think this would work: start by saute setting and just sauteing it using tongs to turn it, searing it for about 6 minutes, until browned. Then add the remaining ingredients and secure the lid and set the pressure release to sealing. press the cancel button to reset the cooking program, then select the meat/stew setting and set the cooking time for 45 minutes at high pressure. Perform a quick release by moving the pressure release to centing, or let the pressure release naturally (this will take about 20 minutes). At this point, you can either enjoy it, or leave the roast in the pot for up to 8 hours on the keep warm setting.
