5 Ingredient Slow Cooker Pork Roast and Potatoes Recipe
Equipment
Ingredients
- 1.5-2 lb boneless pork roast
- 1.5-2 lbs small red potatoes cut into 4s
- 1/2 teaspoon garlic salt
- 1 tablespoon Italian seasoning
- 1 cup chicken broth
Instructions
- Put the pork roast in a slow cooker. Arrange cut potatoes around the roast.
- Sprinkle garlic salt over the roast and potatoes, and then sprinkle the Italian seasoning around over the pork roast.
- Pour chicken broth into the slow cooker. Place lid on and cook on high for 4 hours, or low for 8 hour
- If cooking it on low, remove the roast and let it rest for 5 minutes, then slice it before serving.

Loved this recipe! The time took me longer than it said which means I need to figure that out and the hubs said to sear it longer however, all in all we loved it. Flavor was in point very herby and tender.

Just made this today. I think it’s the best slow cooked pork roast I’ve ever had!!! I had red potatoes and put them in the slow cooker at hour 4 and they were perfectly done at the 8 hour mark. Love that it’s simple and not very many ingredients. This recipe is definitely a keeper.

Hi Judy, thanks for the comment. You could add a bit more seasoning, the other suggestion I’d have would be to saute a little onion and garlic and add that into the slow cooker, that always amps up the flavor 🙂

I don’t know where it all went wrong. Lol! I followed the recipe but used golden potatoes instead of red. Cooked it on high for 4 hours. But somehow my finished meal did not look as good as the featured photos. The meat looked boiled. Everything TASTED GREAT—but the look and texture of the meat said: BOILED.

Glad to hear that your end results weren’t as expected. This is a slow cooker recipe, so the meat won’t look baked, what I like to do is add the seasoning on top. You could have maybe added a little too much liquid if it was boiled-like? It should be cooked through but with the amount of liquid listed in the recipe the roast shouldn’t be submerged in liquid.
