5 Ingredient date turtles
Equipment

- 3/4 cup pitted medjool dates softened, about 8 to 10 dates, 1/2 date per turtle
- 2 tablespoons almond butter
- 1 cup pecan halves about 3 per turtle
- 1 cup semi sweet chocolate chips melted. Can add 1 tsp coconut oil for a 'softer' chocolate topping
- 1 tbs flakey Maldon sea salt for topping, optional
Instructions
- If your dates feel firm, place them in very hot water for 5 minutes to soften, then drain well.
- Add the softened dates and almond butter to a food processor and blend until smooth and combined.

- Line a baking sheet or plate with parchment paper.
- Using a half cookie scoop, portion the mixture onto the parchment paper.

- Press 3 pecan halves into each mound

- Melt the chocolate chips in the microwave in 30-second intervals, stirring between each interval until smooth. If using coconut oil, stir it in while melting.
- Spoon melted chocolate over each pecan cluster.

- Sprinkle with flaky sea salt.
- Let cool completely, then refrigerate until firm.

Made these with my grandkids. We used sun butter bc of a peanut allergy. I think it helped them like them since they helped me make them. Since they stay refrigerated the Sun butter works fine. They were super easy to make and we all loved them. We added them to our charcuterie snack board for afternoon snack and they were a huge hit with little and bigs alike. So we will for sure be making again during the summer.

Dates are so special! They have such a caramelized color and taste naturally with a chew texture. I love them as they are and yet to make them in desserts as a natural sugar source is magnificent as well. Even as in making rice pudding and instead the raisins added used a few diced up dates to add the sweetness and flavor enhancement. Even tossing into oatmeal, letting them plump up when the oatmeal is cooling off from the boiling water. An instant delight! 😊
