I cannot believe it’s the last week in November already. I had the best intentions of posting this recipe earlier in the month, but I kept recipe testing and eating these amazing 5 ingredient overnight oats and kept forgetting to photograph them. So I’m really happy to finally be sharing this easy 5-ingredient grab and go breakfast recipe with you.

Enter these 5 ingredient pumpkin overnight oats recipe. They’re a healthy breakfast, made with only 5 ingredients (oats, almond milk, pumpkin puree, maple syrup and pumpkin pie spice) so it’s a perfect five ingredient Friday recipe to share with you. These overnight oats also happen to be vegan and gluten free!
The topping you could add are endless: granola (my favorite for a little bit of crunch), pepitas (pumpkin seeds), cranberries, raisins, peanut butter, and nuts (pecans).
How to make healthy overnight oats:
The trick to making overnight oats is to get the ratio of ingredients right. You want a thick texture, not a mushy goopy mess, so use want to use about the same amount of liquid as you do oats, so that the oats absorb the liquid!

5 Ingredient Pumpkin Overnight Oats Recipe
Ingredients
- 1/2 cup milk of choice I like using vanilla almond milk
- 1/4 cup pumpkin puree
- 2 tablespoons maple syrup
- 2/3 cup old fashioned oats quick cooking oats work as well
- 1/2 teaspoon pumpkin pie spice
- Toppings optional: pumpkin seeds (pepitas), nuts (walnuts, pecans), raisins or craisins, granola, chia seeds, nut butter, yogurt, berries
Instructions
- In a small glass jar or container pour milk, pumpkin puree, and maple syrup. Add in oats and pumpkin pie spice and stir to combine, making sure all the oats are coated/covered in liquid.
- Cover glass jar or container with a lid or with plastic wrap. Leave in the refrigerator 4 hours or overnight, and enjoy in the morning.
- These oats can be served warm (1 minute in the microwave) or cold. You can make these up to 3 days ahead of time.
