This incredibly easy 5 ingredient pumpkin overnight oats recipe is a delicious on-the-go breakfast which only requires 5 minutes of prep time and is a great way to start your day!

The best pumpkin overnight oats for breakfastI cannot believe it’s the last week in November already. I had the best intentions of posting this recipe earlier in the month, but I kept recipe testing and eating these amazing 5 ingredient overnight oats and kept forgetting to photograph them. So I’m really happy to finally be sharing this easy 5-ingredient grab and go breakfast recipe with you.

The best 5 ingredient breakfast recipe for pumpkin overnight oatsWith all but a few seconds to spare, it’s so amazing to be able to just open the fridge and have a breakfast waiting for you that is all ready to go! Grab-and-go breakfasts are really life savers!

Enter these 5 ingredient pumpkin overnight oats recipe. They’re a healthy breakfast, made with only 5 ingredients (oats, almond milk, pumpkin puree, maple syrup and pumpkin pie spice) so it’s a perfect five ingredient Friday recipe to share with you. These overnight oats also happen to be vegan and gluten free!

The easiest 5 ingredient breakfast overnight pumpkin oats

The topping you could add are endless: granola (my favorite for a little bit of crunch), pepitas (pumpkin seeds), cranberries, raisins, peanut butter, and nuts (pecans).

How to make healthy overnight oats:

The trick to making overnight oats is to get the ratio of ingredients right. You want a thick texture, not a mushy goopy mess, so use want to use about the same amount of liquid as you do oats, so that the oats absorb the liquid!

Ingredients

  • 1/2 cup milk of choice I like using vanilla almond milk
  • 1/4 cup pumpkin puree
  • 2 tablespoons maple syrup
  • 2/3 cup old fashioned oats quick cooking oats work as well
  • 1/2 teaspoon pumpkin pie spice
  • Toppings optional: pumpkin seeds (pepitas), nuts (walnuts, pecans), raisins or craisins, granola, chia seeds, nut butter, yogurt, berries

Instructions

  • In a small glass jar or container pour milk, pumpkin puree, and maple syrup. Add in oats and pumpkin pie spice and stir to combine, making sure all the oats are coated/covered in liquid.
  • Cover glass jar or container with a lid or with plastic wrap. Leave in the refrigerator 4 hours or overnight, and enjoy in the morning.
  • These oats can be served warm (1 minute in the microwave) or cold. You can make these up to 3 days ahead of time.

I forgot where I read it, but it was something abo I forgot where I read it, but it was something about 'normalizing normal/slightly ugly/normal kitchens' and that resonated with me.

When we moved into our house, my original thought was "I absolutely love the house, but maybe we'll redo the kitchen in 5 years to be all white"

After having lived in our house for 6+ months, now the most I have dreams of doing is maybe to redo the laminate countertops that are peeling in some places. Maybe. One day.

But this isn't some before/after post. It's just a post about saying your kitchen/home is fine the way it is, and if you don't have some pinterest board or desire to change your entire kitchen, that's a-ok.

Don't get me wrong, I still LOVE looking at beautiful kitchens and spaces, so I'll just continue adding pretty images to my weekly love-lists and leaving it there - for looking at pretty things vs. wishing to change my house or feeling bad about my kitchen.
