Next time you’re having any part or get-together and need a super easy to prepare recipe that everyone is going to love, I’d definitely recommend making this 5 ingredient slow cooker cheesy potatoes recipe!

Let’s say your oven is full of other things (like this oven baked pork roast) and you need oven space, or it’s 90+ degrees outside (and the last thing you want to do is spend time cooking, over a hot stove), these cheesy potatoes made in a slow cooker are the recipe for you!!

The most amazing slow cooker cheesy potatoes

These 5 ingredient crockpot cheesy potatoes are THE answer.  And all you need is 5 ingredients:

  • Frozen diced potatoes
  • Sour cream
  • Cream of chicken soup
  • Garlic salt
  • Cheddar jack cheese

Simple mix a few ingredients and put them in a crockpot/slowcooker and set it and forget it.

If you’re feeling extra fancy you can stir it a time or two while cooking, but I’ve done it both with and without stirring lol, and they turn out great either way.

The key to making this dish is the cheese. You may have had cheesy potatoes in the past and noticed that there seems to be a greasy texture or layer at the bottom that pools up (kind gross, right?) … well that’s because the wrong type of cheese was used.

I like to use a blend of cheddar-montery jack cheese, called cheddar jack. It works like a charm and really is the best cheese to use for these cheesy potatoes!

I’ve also made these potatoes countless times for parties: baptism parties, birthdays, family dinners. They’re always a huge hit and everyone loves the cheesy potatoes (and I love how easy they are to make!) Equipment

  • Slow Cooker
  • Knives
  • Measuring cups

Ingredients

  • 1 bag frozen diced potatoes (32 oz.)
  • 1 cup sour cream
  • 1 can cream of chicken soup (10.5oz. )
  • 1 teaspoon garlic salt
  • 2 cups cheddar jack cheese shredded

Instructions

  • Spray slow cooker with cooking spray (this is optional, but I like to do it.)
  • Put frozen potatoes in a slow cooker.
  • In a bowl combine sour cream, cream of chicken soup and garlic salt and stir to combine. Pour mixture on top of the potatoes.
  • Add cheese to the slow cooker and stir everything together.

  • Turn slow cooker on high and cook for 4 hours, then serve and enjoy

Notes

If you want to double this recipe, just double all ingredients - your crockpot will be very full, but it works 🙂 Also, add an hour of cooking time!
If gluten free, be sure to use a gluten free cream of chicken soup.
Please NOTE: This recipe calls for DICED potatoes, if you use shredded hash browns, it's still delicious, but it cook faster.
Crockpots/slow cookers vary - check yours after 3 hrs for doneness.

    Hi Sweetness !!! Had to make potatoes
    for company party. 28 people. Fried cat
    fish. In Mo. Made coleslaw & baked beans. Did fritters, too for fillers, not to mention cheese & venison summer sausage. Tried your recipe. Doubled it & added a few roasted onion flakes. Made all but taters last night. Put in fridge. Put it together this am & in slow cooker @ 7a. Was ready by noon. They ate every little bit of it. 4#. Eschewed coleslaw & baked beans.
    It’s gone. Wah!!! Thought may have left
    overs. Nada Zip Zero. Most excellent. Can
    only hope licked bowl. (Easier to wash)
    Very Very Good!!! Crickie. Now have to
    deal with beans & slaw. Thank you for

      I would add an hour and you should be good to go (I’ve actually made a double batch and had them done in the same amount of time with a new crock pot, so it just depends, but definitely they should be good with an extra hour)!

          Not a lot, honestly it depends on your slow cooker. Sometimes I increase it by half an hour, with another slow cooker I’ve increased it an hour. But it shouldn’t need more time than that, I’d just check them as it gets close to the end.

    Do you think it would work to make it the night before and then put on low to heat through the next day? This sounds yummy and just the right side to take to our school staff lunch next week. I just don’t want to get up super early to arrive at school by 6 am to get it going to have it ready by first lunch.

      Hi Linda, thank you so much for the comment. I definitely think this definitely could cook on low overnight. However, if it’s being made for a lunch, I really would suggest making it same day – I don’t know how long it would be ok in the crockpot cooking and staying warm without getting really overcooked if you know what I mean…like if you put it in before you went to bed at 10 and then woke up at 6, it would be done. Then from 6-12 that’s another 6 hours, so that just might be a little much and the potatoes might stick to the sides. OR – you could make these the night /day before, and then just warm them up in the microwave or put them on warm setting. Hope this helps!

    Anyone have an idea how to add the crispy cornflakes (not soggy)to top? Cook butter and cereal in oven? Or put the whole thing in oven at the end?

    I just bought a new slow cooker and wanted to make cheesy potatoes for our school potluck. I was quite nervous, because I had seen so many unhappy comments on other online recipe sites. I finally decided your recipe would be my best bet. I am so happy! Everyone raved about the dish! I did have to add a small amount of coconut milk an hour before the cooking time was up, because it seemed like it was necessary. I think maybe I didn’t measure the cheese correctly. Anyway, thank you for this easy and delicious recipe. I had prayed the potatoes would turn out well, and your recipe was the answer!

      Sorry i’ve never used a pressure cooker. If you’ve used one before to make potatoes then you can definitely use it, I just don’t know how the cook times would translate, sorry!

    In response to the person who said theirs were dry. The definitely left something out because it is impossible for these to be dry! If she doubled the recipe she possibly forgot to double all the ingredients. I doubled it and definitely was not dry. I did make a batch that was not as good by using a really cheap brand of hash browns–maybe that is what she did? I found an off brand but they are great compared to the others I used.

      Last weekend I used a nesco for the first time, is that what you’re referencing by an “electric turkey roaster?” If it is, I would suggest 5- 6 hours at 250. I would also suggest definitely making sure the vessel is greased very well so the potatoes don’t stick ok much 🙂

    Please help! I have these in the crockpot as I type. One response you said to add 2hrs for a double batch and another said you’ve never cooked over 4 hrs for a double batch. I want them to cone out great.

      Hi Glenn, you should be fine if they’re on high for 4 hours, if you want to be on the safe side you could always add a little time, it won’t hurt them to be in the slow cooker a little longer. Hope that helps, I think you’re going to love them 🙂 I just made them for my sons baptism and for two parties last weekend, each time doubling the batch 🙂

          Hmmm, that’s so odd that yours came out dry, I have never experienced that or heard that feedback, and this recipe has been made hundreds of times! Can I ask, did you double all the ingredients or just the potatoes? Did you make any changes to the recipe? These come out really creamy so I’d love to know what happened. Also could you tell me how long you cooked them for?

      Oh my goodness, the only thing I can think of is that your crock pot is broken? I have made these dozens of times, and I’ve even doubled the batch and still it has never taken over 4 hours!!! I’d love to hear back to see what happened (I have on occasion forgotten to plug my crock pot in ?).

      For sure, it would just look a little less orange because other soups don’ have that yellow look like the cream of chicken does. But I did meet someone who says they make this with cream of mushroom and they love it that way 🙂

      I love to do these potatoes with cream of onion. I know that sometimes cream of onion can be hard to find at least where I am, but when I can use it I love them that way. Otherwise I have done them with cream of celery and cream of mushroom as well, both very good as well.

      It would definitely work doubled, I just did that a few weeks ago. It will be very full, but it works. Also I’d recommend adding a little cooking time to it.

A few swaps:
Don’t have pecans? No worries, add walnuts!
Don’t have feta cheese? You could use goat cheese instead!
Only have 2 apples or 2 pears instead of 1 of each? That’s ok, use double of one or the other!
Don’t have spinach? Use other spring greens or arugula or kale.
