Equipment

  • 1 Slow Cooker

Ingredients

  • 1 Jar (24 oz) vodka pasta sauce (or marinara)
  • 1 cup Greek yogurt, divided
  • 1/2 cup chicken broth or water
  • 1 jar (7 oz) fire-roasted bell peppers
  • 1 fresh bell pepper, diced
  • 1 teaspoon salt
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon Italian seasoning
  • 1.25 lbs chicken breasts

Instructions

  • Add to Slow Cooker: Place all ingredients into the slow cooker, except for 1/2 cup of the Greek yogurt.
  • Cook: Cover and cook on low for 8 hours or high for 4 hours until the chicken is tender and easy to shred.
  • Shred & Stir: Shred the chicken directly in the slow cooker and stir in the remaining 1/2 cup of Greek yogurt.
  • Serve: Spoon over rigatoni, another pasta of your choice, or rice.

    This was amazingly easy and oh so good. I have now made this multiple times and each time it exceeds expectations. So so good and everyone loves it. Love the higher protein and used a protein rich pasta to help out and it still tasted amazing. I love it’s a fix and forget recipe!
