If you’re not sure what to do with your Thanksgiving leftovers, look no further than these Air Fryer turkey egg rolls. They’re delicious, fun and super easy to make!
Fair warning, you may just want to enjoy this recipe all year round instead of just at Thanksgiving. It’s a fun take on what to do with all of those leftovers.
What ingredients do I need for these leftover egg rolls?
Well, you can use any of your favorite Thanksgiving leftovers! But here is what we used:
- Perfectly roasted potatoes or mashed potatoes
- Classic cranberry sauce
- Frozen corn (or green beans, sweet potato etc.) – any vegetable will do!
- Air Fryer turkey breast
- Stuffing – a delicious homemade one like this sourdough stuffing or one out of the box is great too.
You’ll also need an egg and water to create a simple eggwash.
The best part about this recipe is that you can really use whatever you want on the inside. If you have sweet potatoes, instead of mashed, those would be great too! Plus, you even get to use up all of your leftover cranberries because it serves as the perfect dipping sauce for these turkey egg rolls.
How do you make thanksgiving leftover egg rolls?
- Combine all of your favorite leftovers in a bowl.
- Spoon about 1/4 cup mixture into bottom third of egg roll wrapper.
- Dip your finger in a small bowl of egg wash (water and eggs) and run it along the edges of the wrapper. Lift the side nearest you and wrap it around the filling. Fold the left and right corners in towards the center and continue to roll into a tight cylinder. Set aside and repeat with remaining wrappers and filing.
- Preheat air fryer to 400.
- Spray all sides of the roll with oil. Working in batches, arrange a single layer of the rolls in the air fryer basket. Cook for 8 minutes, flipping halfway, until browned.
Before you put your egg rolls into the Air Fryer, be sure to spray all of the sides so nothing sticks.
We are big fans of using the Air Fryer and Phi uses this one. But if you don’t have an Air Fryer, you can certainly bake these on a sheet pan in the oven. They will just take a bit longer to crisp up!

Air Fryer Turkey Egg Rolls (Thanksgiving Leftovers)

- 1 cup turkey
- 1 cup stuffing
- 1/4 cup corn
- 1/4 cup potatoes
- 12 egg roll wrappers
For dipping
- Cranberry sauce
For eggwash
- 1 egg
- 1 teaspoon water
Instructions
- Preheat air fryer to 400.
- Mixing all leftovers, except cranberry sauce, in a mixing bowl.
- In small glass bowl, mix one egg with 1 teaspoon water to create egg wash. Set to the side.
- Working one at a time, place an egg roll wrapper on a clean surface. Spoon ¼ cup mixture onto the bottom third of the wrapper. Dip your finger in your egg wash and run it along the edges of the wrapper. Lift the side nearest you and wrap it around the filling. Fold the left and right corners in towards the center and continue to roll into a tight cylinder. Set aside and repeat with remaining wrappers and filing.
