Antipasto Skewers Recipe

This antipasto skewers recipe is perfect for any potluck, picnic or party.  They are a great cold appetizer and super easy to make! Tortellini appetizer skewers, what could be better?

Antipasto is traditionally the first course of a formal Italian meal.  It is always delicious and a great way to start a meal.  Well, this recipe is anything but formal, but it is still just as tasty!

Ingredients for antipasto skewers

What ingredients do I need to make antipasto skewers?

  • Cheese tortellini – you’ll cook these according to instructions on package
  • Italian salad dressing – this is an optional ingredient (see below)
  • Mozzarella balls – you can buy a container of pre-marinated mozzarella balls, but if you can only find plain, then you’ll want the dressing to use as a marinade.
  • Cherry or grape tomatoes – you will need a total of 1 1/2 containers.  If you have extra, might I suggest making these?
  • Marinated artichoke hearts – you will cut these into bite sized pieces
  • Uncured salami – purchase pre-sliced salami or you can slice salami very thin.
  • Kalamata olives – it’s as simple as that!
  • Fresh basil leaves – If your leaves are large, you’ll cut them into bite sized pieces.
  • Wooden skewers – I use ones like these, but you can use smaller skewers and have a higher yield

Put anything on a stick, and it immediately becomes more fun (and easy to eat) in my opinion.  To make these antipasto skewers, you will simply alternate tortellini, mozzarella, tomatoes, artichoke hearts, salami, olives and basil.

You know what else I love about this recipe?  These skewers are a great recipe that you can easily make ahead.  I always love something that saves me time!

The only problem with this antipasto skewers recipe is that you might have trouble not eating the whole platter!  Prep them ahead, bring them to a potluck and quickly become the favorite guest at the gathering.

Antipasto Skewers Recipe

This antipasto skewers recipe is perfect for any potluck, picnic or party.  They are a great cold appetizer and super easy to make!

Servings: 20 skewers

Ingredients

  • 1 bag fresh cheese tortellini 9 oz.
  • 1/2 cup Italian salad dressing optional
  • 2 containers marinated mozzarella balls 12 oz. each
  • 2 pints cherry or grape tomatoes
  • 1 jar marinated artichoke hearts drained and cut into pieces
  • 1/2 lb. uncured salami thinly sliced or pre-sliced
  • 25 kalamata olives pitted
  • 1 cup fresh basil leaves about 50 leaves. cut if leaves are large
  • 15-25 12-inch wooden skewers

Instructions

  • Cook tortellini according to package instructions, drain and run under cool water, let sit for 5-10 minutes until room temperature.
  • Put tortellini in a bowl and  pour in Italian dressing, stir to combine.

  • Start building skewers, I like setting all ingredients out in bowls or in their jars, draining liquid or cutting, and then building the skewers in an assembly line fashion.

To assemble skewers

  • Tortellini, grape tomato, mozzarella ball, basil leaf, artichoke heart piece, salami, olive, mozzarella ball, basil leaf, tomato, tortellini
  • Each skewer will have 2tortellini, 2 grape tomatoes, 2 mozzarella balls, 2 basil leaves, 1 olive, 1 artichoke heart, 1 salami piece

  • You can mix and match the order of the ingredients on the skewers.
  • Serve or store in the refrigerator until ready to serve.

Notes

A few recipe notes:
  • If you can't find marinated mozzarella balls, you can use Italian salad dressing to dress plain mozzarella balls.
  • For salami, I like using Sopressa or Genoa
  • You can use smaller wooden skewers if you'd like to yield more skewers
