Black Bean and Corn Salad

This Black Bean and Corn Salad is one of those recipes – the kind that shows up at a party and quietly steals the show. My mother-in-law brought it to a get-together recently, and I could not stop eating it. Like, “hover by the bowl and pretend to be social” levels of good. It turns out, she got the recipe from a Weight Watchers group years ago, and now I’m convinced everyone needs this in their life. The combo of sweet corn, hearty black beans, zingy citrus, and fresh herbs is fresh, filling, and endlessly snackable. Bonus: it’s even better the next day and travels like a dream.

  • Make-ahead magic: It actually improves after chilling overnight.

  • Healthy and satisfying: Packed with plant-based protein and fiber.
  • Potluck gold: It travels well and holds up beautifully at room temperature.

Tips for Success

  • Fresh corn is best, but frozen or canned will work in a pinch. If using frozen, thaw and drain well.
  • Let it sit – the flavors deepen after a few hours in the fridge.
  • Chop finely for the best texture and easiest scooping.

Customizations

  • Add diced avocado right before serving for creaminess.
  • Toss in diced red bell pepper for extra crunch and color.
  • Mix in crumbled feta or cotija cheese if you want a salty bite.
  • Don’t like cilantro? Try fresh parsley or a bit of chopped mint for a twist.

Serving Suggestions

  • As a dip with tortilla chips
  • On top of tacos, nachos, or burrito bowls
  • With grilled chicken, shrimp, or tofu
  • As a stand-alone side for summer cookouts or potlucks

FAQs for black bean and corn salad

  • Do you rinse canned black beans before using them? Yes, rinsing canned black beans is recommended. Rinsing removes excess sodium and the starchy liquid from the can, which improves the taste and texture of the salad.
  • How long does black bean and corn salad last in the refrigerator? Black bean and corn salad will stay fresh for about 3 to 4 days when stored in an airtight container in the refrigerator. The flavors often improve after the salad sits for a few hours because the dressing has time to soak into the ingredients.
  • Can you make black bean and corn salad ahead of time? Yes, this salad is perfect for making ahead. Preparing it several hours in advance – or even the day before – allows the flavors to meld together and makes the dish even more flavorful.
  • Can black bean corn salad be frozen? Freezing is not recommended for black bean corn salad. The vegetables and beans can become mushy after thawing, which changes the texture of the salad.
