Looking for a cozy, hearty meal that’s simple to prepare and packed with flavor? This easy stovetop chili is just what you need! It’s rich with ground beef, savory mushrooms (optional), and a medley of beans, all cooked together with tomatoes and spices for a delicious, no-fuss dinner. Plus, it all comes together in one pot, making clean-up a breeze AND it’s done in under an hour!
There’s a reason why chili is a go-to comfort food for so many people: it’s hearty, filling, and packed with bold flavors that only get better as it simmers. This stovetop version takes all those great qualities and makes them even more accessible by using simple ingredients you likely already have in your pantry. With minimal prep and one pot to clean, this chili is a stress-free meal that’s perfect for busy weeknights. Whether you’re feeding a crowd or meal-prepping for the week, this recipe checks all the boxes.

Not only is this chili delicious, but it’s also incredibly versatile. You can customize it to suit your taste or dietary needs. Looking for a vegetarian version? Swap the ground beef with plant-based crumbles or add more vegetables like bell peppers, zucchini, or sweet potatoes. Want a heartier texture? Consider adding a handful of quinoa or rice during the simmering process. You can even control the heat level to suit your family’s preferences—keep it mild or turn up the spice for a bolder flavor.
How to customize your chili:
- Add a kick: If you love heat, feel free to add some cayenne pepper or diced jalapeños for an extra spicy kick.
- Make it vegetarian: Swap the ground beef for a plant-based alternative or omit it entirely and add extra beans or vegetables.
- Meal prep: This chili makes great leftovers and can easily be frozen for a quick meal later in the week.
Perfect for leftovers and freezing
Another reason to love this stovetop chili is that it tastes even better the next day. As the chili sits in the fridge, the flavors have a chance to meld and deepen, making for an even more delicious meal when reheated. This makes it a perfect dish for meal prepping—just cook once and enjoy it throughout the week. And if you happen to have any leftovers, chili freezes beautifully. Store it in an airtight container, and it will last in the freezer for up to three months. When you’re ready to eat, just thaw and reheat for a quick, comforting meal.

How to make easy stovetop chili:
Step 1: Sauté the onions and mushrooms Heat the 2 tablespoons of EVOO in a large pot or Dutch oven over medium heat. Once the oil is shimmering, add the chopped red onion and mushrooms (optional). Cook for 5-7 minutes, stirring occasionally, until the onions are soft and translucent, and the mushrooms are golden brown.
Step 2: Brown the ground beef Push the sautéed vegetables to the side of the pot and add the ground beef. Break the meat up with a spatula and cook until browned, about 5-7 minutes. Drain any excess fat from the pot, if necessary.
Step 3: Season and add tomatoes Sprinkle the garlic powder, kosher salt, chili powder and tajin (optional) over the beef and vegetables. Stir well to combine. Next, pour in the crushed tomatoes, tomato sauce, and diced tomatoes. Stir everything together, making sure the tomatoes are evenly distributed.
Step 4: Add beans and water Drain and rinse the pinto, kidney, and black beans. Add the beans to the pot, along with the 1 1/2 cups of water. Stir to combine all the ingredients, then bring the chili to a simmer.
Step 5: Simmer and serve Reduce the heat to low, cover the pot, and let the chili simmer for about 30-40 minutes, stirring occasionally to prevent sticking. This will allow all the flavors to meld together beautifully. Taste and adjust seasoning, if needed.
Once the chili is done, serve it hot with your favorite toppings! Some great options include shredded cheese, sour cream, chopped cilantro, or a squeeze of lime.

We love this chili recipe, except I have to leave out mushrooms for a couple of people. It’s comes together easily and can simmer on the stovetop in a Dutch oven for a while. We love to add the standard sour cream and cheese as well as fresh chopped white onions, fresh sliced jalopenos, sharp cheddar and fresh homemade tortillas chips covered with a little garlic powder and cayenne crushed over the top. Makes for a wonderful meal and brat or hotdog topping. If feeling fancy I use a less expensive steak in as the protein source.

Great toppings on chili are so numerous! We like chili flakes, green onions fresh from the garden, sharp cheeses like gorgonzola or even a special Canadian Fine Aged Cheddar.

My favorite chili toppings are plain greek yogurt (or sour cream), green onions, and shredded cheddar cheese!
Sweetphi says
We use Greek yogurt in place of sour cream too!! It’s a great way for our kiddos to get a little protein in.

Ooh, tajin and mushrooms – two good suggestions I haven’t tried yet in chili! I normally just top chili with cheese & sour cream (yes, both 🙂 but sometimes if I have time I make cornbread and we add a square to each bowl.
Sweetphi says
The tajin is a true game changer, give chili the best flavor!
