Looking for easy family dinner inspiration? Welcome to the family meal plan – real life edition. Here’s everything our family of six actually ate this week-real dinners, realistic breakfasts and lunches, plus a few little notes from life along the way.
- Chicken Enchilada Casserole – One of my favorite freezer meals. I always make two and freeze one for a busy night. My kids like it served with extra sour cream.
- Chicken Feta Tomato Fettuccine
- Lamb Meatball Eggplant Tomato Skewers – We grilled these outside and served them with pita and tzatziki.
- Sushi Night (Sam ate ALL the sushi 😂)
- 5 Ingredient Pesto Salmon with Couscous – This is one of those dinners that feels fancy but comes together in about 20 minutes.
- 5 Ingredient Stuffing & Chicken – This was a surprise, EVERYONE ate it!
- Slow Cooker Mediterranean Pulled Pork – I made a double batch because the leftovers are amazing for lunches.
Lunches
- Lately we’ve been loving DIY sandwich bars and then one with focaccia (from TJs), mayo, pesto, lettuce, tomato, red onion, dill, turkey, and provolone. Everyone builds their own sandwich and it’s one of those lunches that somehow never gets old. Great for weekends or busy weeknights or when friends are over!
Breakfasts
- Trader Joe’s yogurt cups continue to be a huge hit—they’re the perfect size for the kids (my kids don’t finish those big Greek yogurt cups, so these small ones are perfect.)
- I also made a big batch of homemade granola for easy breakfasts all week.
Little Notes From This Week
- Sam shocked us all by eating more sushi than anyone else, literally, Nick got none, I got one little piece lol.
- Snack plates continue to save the day.
- Homemade granola = absolutely worth making ahead.
