- Veggie chopper: This is my number-one recommendation for this recipe. It chops the cucumber, bell pepper, red onion, and pepperoncini into small, evenly sized pieces in minutes. The smaller pieces give the salad the best texture and make sure you get a little of everything in each bite.
- Large mixing bowl with a lid: Mix, chill, store, and transport the pasta salad in the same bowl. This is especially helpful when you’re making it ahead or bringing it to a party.
- Meal-prep containers: This pasta salad keeps well in the refrigerator, so I love dividing it into individual containers for easy lunches throughout the week.

I originally saw a version of this recipe on Instagram but of course couldn’t find it again, so I made this from memory and added some stuff, if you know the original source I’d love to credit them! I make this with an 8oz box of Goodles (my favorite protein pasta), but you could easily double the recipe and make it with a 1lb box of any kind of noodles you’d like! If you make the recipe as written it has 11 gm per serving for a smaller side dish, if you’re eating a meal portion it has 22 gm!

High Protein Pasta Salad
Equipment
- 1 veggie chopper optional
Ingredients
- 8 oz dry protein pasta Goodles, Barilla Protein + or Banza
- 1 15oz can chickpeas drained and rinsed
- 1 large English cucumber chopped
- 1 bell pepper chopped, any color
- 1/2 red onion finely diced
- 1/4-1/2 cup pepperoncini finely diced
- 1 heavy pinch Kosher salt
- 4 tablespoons Greek Yogurt I use 0%, any plain yogurt will work
- 6 tablespoons Pesto
Instructions
- Cook the pasta according to package directions. Drain and let cool slightly.
- In a large bowl, combine the chickpeas, cucumber, bell pepper, red onion, pepperoncini, and salt.

- Add pasta to bowl and dollop Greek yogurt and pesto on top.
- Toss to coat. Taste, add a little salt if necessary.
- Chill before serving for best flavor, store in refrigerator.
