High Protein Sweet Potato Cheeseburger Bowls with Special Sauce
Ingredients
Roasted Sweet Potatoes
- Olive oil spray
- 2 medium sweet potatoes (14 oz), peeled and cut into 3/4 inch cubes
- 1 1/2 teaspoons extra-virgin olive oil
- 1/4 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- Freshly ground black pepper
Special sauce
- 1/4 cup light mayonnaise
- 1 teaspoon yellow mustard
- 2 tablespoons ketchup
- 1 1/2 teaspoons barbecue sauce
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon sweet paprika
- 1 teaspoon dill pickle brine I ended up adding 3 teaspoons, I like a lot of pickle flavor!
Bowls
- 1 1/4 pounds 90% lean ground beef, bison or turkey I use Organic ground beef
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- freshly ground black pepper
- 4 cups chopped iceberg or romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 medium red onion, thinly sliced or pickled red onions
- 1 dill pickle chopped or sliced
- 1-2 oz sharp cheddar cheese shredded
Instructions
Roast the sweet potatoes
- Preheat the oven to 425. Lightly spray a sheet pan with oil.
- In a medium bowl, toss the sweet potatoes with the olive oil, salt, garlic powder, and black pepper to taste. Spread out in an even layer on the prepared sheet pan and transfer to the oven.
- Bake until tender, golden, and browned on the edges, 25 to 30 minutes, tossing every 10 to 15 minutes. Alternatively cook in the air fryer 400 for 15 minutes, toss 1/2 way through.
Meanwhile, make the special sauce:
- In a small bowl, combine the mayonnaise, yellow mustard, ketchup, barbecue sauce, oion powder, garlic powder, paprika, and dill pickle juice and mix well. (Makes about 1/2 cup)
For the bowls:
- Heat a large skillet over medium-high heat. When hot, spray with oil and add the ground beef (or other ground meat you're using), salt, garlic powder and pepper to taste. Cook, undisturbed, until it starts to brown, 2 to 3 minutes. Continue cooking, breaking up the meat, for 5 to 6 minutes until cooked through.

- Divide the lettuce among four large shallow bowls or plates. Top with the cooked meat, sweet potatoes, tomatoes, red onion, and pickles. Drizzle each with 2 tablespoons sauce and serve immediately.
