This Crispy Hot Honey Chicken Sheet Pan Dinner is one of those meals I never thought got enough love because it is so good so I’m giving it a little update because I make it so frequently—and it gives you an entire dinner on one pan. Tender chicken breasts are topped with a thin layer of sour cream and buttery seasoned panko for an easy crispy coating, then baked alongside Yukon Gold potatoes and broccoli and finished with a sweet and spicy hot honey drizzle. It’s flavorful, family-friendly, and exactly the kind of dinner I want on a busy weeknight.

How Does the Chicken Get Crispy Without Frying?

The secret is spreading a small amount of sour cream over the top of each chicken breast and pressing the seasoned panko mixture into it. The sour cream helps the breadcrumbs stick while also keeping the chicken tender.

The butter and olive oil mixed into the panko help the topping turn golden and crisp as it bakes. You only need to coat the top of the chicken, so there’s no messy breading station and no need to flip it.

  • Cut the potatoes into small, evenly sized cubes so they become tender in the same amount of time as the chicken.
  • Use small chicken breasts or pound thicker pieces to an even thickness. Very thick chicken may take longer to cook than the vegetables.
  • Press the panko mixture gently into the sour cream so it stays on the chicken while baking.
  • Arrange everything in a single layer and avoid overcrowding the pan. Crowding causes the vegetables to steam instead of roast.
  • Toss the potatoes about halfway through cooking so they brown more evenly.
  • The chicken is done when the panko topping is golden, the center is no longer pink, and an instant-read thermometer registers 165°F in the thickest part.
  • If the chicken finishes before the potatoes, transfer it to a plate to rest and return the vegetables to the oven for a few extra minutes.
  • Drizzle on the hot honey after baking so the panko stays crisp.

  • Parchment paper sheets: Makes cleanup easier, especially if a little hot honey or panko falls onto the pan. I’m kind of obsessed with these, they last forever, I’m still using the box I bought 2 years ago.

  • Is hot honey chicken very spicy? It has a gentle sweet heat when made with 1 tablespoon honey and ½ teaspoon red pepper flakes. Use fewer red pepper flakes or drizzle the hot honey only over the adult portions for a milder version.
  • Can I use store-bought hot honey? Yes. Store-bought hot honey works perfectly and makes this sheet pan dinner even easier.
  • Can I prepare this recipe ahead of time? You can cut the potatoes and broccoli and prepare the seasoned panko mixture in advance. Store everything separately, then assemble just before baking so the breadcrumb topping stays crisp.
  • Can I use chicken thighs? Boneless, skinless chicken thighs should work, but the cooking time may vary. Use an instant-read thermometer to make sure they are cooked through.
  • Why aren’t my potatoes tender? The potato pieces may be too large or crowded together. Cut them into small, even cubes, arrange them in a single layer, and toss them halfway through cooking.
  • Can I use frozen broccoli? Fresh broccoli works best because frozen broccoli releases more water and may become soft instead of roasted.

  • Reheat: Warm everything on a sheet pan or in the air fryer for the best texture. The microwave also works, but the panko topping will be softer.

Equipment

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons sweet + smokey barbecue seasoning
  • 1 cup panko breadcrumbs
  • 4 small chicken breasts
  • 2 tablespoons sour cream
  • 2 cups broccoli florets
  • 4 medium yukon gold potatoes cut into cubes
  • 1 1/2 tablespoons hot honey 1 Tbs honey and 1/2 tsp red pepper flakes

Instructions

  • Preheat oven to 375.
  • In a small microwave safe bowl melt 1 tbsp butter, approximately 30-45 seconds. Stir in 1 tbsp olive oil, bbq seasoning, and a large pinch of salt. Add panko and stir again until combined.
  • Lightly spray a baking sheet with cooking spray.
  • Place chicken breast on baking sheet and spread sour cream on top of chicken breasts. Sprinkle panko mixture on top, pressing to adhere (no need to coat the underside).
  • Place broccoli and potatoes on the baking sheet. Lightly drizzle olive oil over everything on the baking sheet and sprinkle with salt and pepper. Bake until potatoes are tender when poked with a fork and chicken is no longer pink in the center; about 25-30 minutes minutes. Toss potatoes halfway through (at around 15 minutes).  
  • Make hot honey. Simply combine 1 tbs. honey and 1/2 tsp. red pepper flakes.
  • Divide chicken, potatoes and broccoli between plates. Drizzle chicken with hot honey, to taste.

    Oh, please! My very absolute favorite summer recipe is your Grilled Balsamic Veggies! I love them SOOOOO much that I could eat them for breakfast!!

    My favorite summer recipe is some thrown-together version of pasta with bacon, freshly-shelled garden peas, micro greens, lots of fresh parsley, and big parmesan shavings! I guess you could make it carbonara if you added eggs! SO GOOD! It’s so fast if you pre-bake a big batch of bacon to use throughout the week. Warning, you may smell like bacon all the time!

    My favorite summertime recipe is a 7 layer Mexican dip that consists of (homemade pref.) refried beans, guacomole, sour cream with taco seasoning, shredded cheddar cheese, chopped green onions, diced fresh summer tomatoes or homemade salsa, and diced black olives. Yum. Takes a while to make but can be inhaled in minutes.

    Favorite summertime recipe would be anything with shrimp. Grilled or pan fried, dusted with a sweet and savory rub and served with rice and veggies. Can easily go from stir fry to Mexican, depending on what is in the house.

      I too love shrimp in the summer! I recently went to a restaurant and ordered their shrimp tacos, they were soooo spicy, but I ate them anyway because they were so good and summery lol!

    My favorite summer recipe is Marinated Cucumbers, red onions and tomatoes. It’s so refreshing and goes with everything and so easy to make.
    1 cup water
    1/2 cup distilled white vinegar
    1/4 cup vegetable oil
    1/4 cup sugar
    2 teaspoons salt

    1 tablespoon fresh, coarsely ground black pepper
    3 cucumbers, peeled and sliced 1/4-inch thick
    3 tomatoes, cut into wedges
    1 onion, sliced and separated into rings

    Whisk water, vinegar, oil, sugar, salt, and pepper together in a large bowl until smooth; add cucumbers, tomatoes, and onion and stir to coat.
    Cover bowl with plastic wrap; refrigerate at least 2 hours.
