- 24 Nilla wafers
- 1 block cream cheese 8 oz.
- 1/2 cup heavy whipping cream
- 1/4 cup sugar
- 1 teaspoon vanilla extract

Instructions
- Line a mini muffin pan with paper liners.
- Instead of making a crust, I use Nilla wafers as a shortcut. Place one Nilla wafer in the bottom of each muffin liner.
- Combine cream cheese, heavy whipping cream, sugar and vanilla using a hand mixer.
- When mixture is combined and creamy, put filling into a large Ziploc bag or piping bag. Snip corner of Ziploc bag if you're making your own piping bag. Pipe topping onto each Nilla wafer.
- Refrigerate for one hour.
- Add a berry on top of each mini cheesecake bite.

I just made these for my 2nd neighbourhood party. But they don’t sell Nilla cookies in Canada anymore. I used Maria cookies – kind of like an arrowroot cookie from Spain. They fit in large cupcake papers so the recipe makes 22+. I got 16 so had extra to leave at home! I topped half with strawberries and half with blueberries. Yummy! AND I cut the sugar in half.
