These 5 Ingredient Mini No Bake Cheesecake Bites are one of the easiest desserts you’ll ever make! With a creamy cheesecake filling, a crisp Nilla Wafer base, and endless topping options, they’re perfect for parties, holidays, potlucks, baby showers, and summer gatherings when you don’t want to turn on the oven.

Tips for Success

  • Start with softened cream cheese so the filling mixes together smooth and creamy without lumps.
  • Whip the heavy cream until it forms stiff peaks before folding it into the cream cheese mixture. This keeps the filling light and fluffy.
  • Use a cookie scoop to evenly portion the filling so every cheesecake bite is the same size. Or use a piping bag!
  • Allow the cheesecake bites to chill for at least 2-3 hours before serving. They’ll firm up beautifully in the refrigerator.
  • If you’re serving these outside during warm weather, keep them refrigerated until just before serving.

  • Nilla wafers
  • Cream cheese
  • Heavy whipping cream
  • Sugar
  • Vanilla extract

Customizations

One of my favorite things about these mini cheesecakes is how easy they are to customize!

Try topping them with:

  • Fresh strawberries, blueberries, raspberries, or cherries
  • Lemon curd
  • Chocolate sauce
  • Caramel sauce
  • Crushed Oreos
  • Mini chocolate chips
  • Toasted coconut
  • Crushed peanut butter cups
  • Rainbow sprinkles for birthdays
  • Fresh mint leaves for an elegant finish

You can even swap the vanilla extract for almond extract, lemon extract, or orange extract for a fun flavor twist.

Can I make these ahead of time?

Yes! In fact, they’re even better after they’ve chilled for several hours. They’re a wonderful make-ahead dessert for entertaining.

Can I freeze mini cheesecake bites?

Absolutely. Freeze them in a single layer first, then store them in a freezer-safe container. Let them thaw in the refrigerator before serving.

Can I use homemade whipped cream instead of heavy cream?

The heavy cream in this recipe becomes homemade whipped cream after whipping, giving the filling its light, airy texture.

Can I make these gluten-free?

Yes! Simply substitute your favorite gluten-free vanilla cookies for the Nilla Wafers.

Can I add fruit?

Definitely. Fresh berries are one of my favorite toppings, but peaches, cherries, kiwi, or mango are also delicious.

Storage

Store leftover cheesecake bites in an airtight container in the refrigerator for up to 4 days.

If stacking them, place parchment paper between the layers to keep the tops looking nice.

These also freeze well! Freeze in a single layer until solid, then transfer to a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before serving.

To make the cheesecake layer – fill a bag with your cheesecake filling and snip one of the corners off to make your own piping bag.  Generously squeeze the cheesecake filling on top of each cookie (or you can use a cookie scoop).

Now it’s time to have a little fun!  You can use strawberries or raspberries to top each mini cheesecake bite.  Of course, you can use any berry of your choice or even some mini chocolate chips would be delicious.

For an extra festive tip: simply put one full strawberry on top of each cheesecake bite and you’ve got yourself a Santa Hat!  These bites are the perfect easy dessert for any holiday party.

You could easily take this mini no-bake cheesecake bites recipe and turn it into a cheesecake dip.  Just put the filling mixture in a bowl and the Nilla wafers on the side.  Graham crackers would also be great to dip in!

Mini No Bake Cheesecake Bites

These mini no bake cheesecake bites are super easy to make and only require 5 ingredients.

Servings: 24 mini cheesecakes

Equipment

  • Mini muffin pan

Ingredients

  • 24 Nilla wafers
  • 1 block cream cheese 8 oz.
  • 1/2 cup heavy whipping cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract

Optional toppings

  • strawberries, raspberries

Instructions

  • Line a mini muffin pan with paper liners.
  • Instead of making a crust, I use Nilla wafers as a shortcut. Place one Nilla wafer in the bottom of each muffin liner.
  • Combine cream cheese, heavy whipping cream, sugar and vanilla using a hand mixer.
  • When mixture is combined and creamy, put filling into a large Ziploc bag or piping bag. Snip corner of Ziploc bag if you're making your own piping bag. Pipe topping onto each Nilla wafer.
  • Refrigerate for one hour.
  • Add a berry on top of each mini cheesecake bite.

You could also enjoy this as a cheesecake dip.  Just put the filling in a bowl, with Nilla wafers on the side. 
If you want to make these festive for Halloween, Christmas or any winter months, make them into ghosts, Santa hats (using strawberries) or snowmen.
You could use a full size muffin pan if you prefer larger cheesecakes.

    I just made these for my 2nd neighbourhood party. But they don’t sell Nilla cookies in Canada anymore. I used Maria cookies – kind of like an arrowroot cookie from Spain. They fit in large cupcake papers so the recipe makes 22+. I got 16 so had extra to leave at home! I topped half with strawberries and half with blueberries. Yummy! AND I cut the sugar in half.
