Strawberry layer cake
Ingredients
- 1/2 cup butter 1 stick, at room temperature
- 2 cups all purpose flour
- 1 1/2 cups sugar
- 3 large eggs
- 1 tablespoon baking powder
- 1/2 teaspoon salt

- 1 teaspoon vanilla extract

Instructions
- Preheat oven to 350. Grease 2 8-inch round cake pans, line with parchment paper rounds, spray parchment paper with cooking spray as well.
- With a hand mixer, beat butter and sugar until combined, 1-3 minutes. Add eggs and beat until well combined, scraping down sides of the bowl as necessary. Add flour, baking powder, salt and freeze dried strawberries; beat until just combined. Add milk and vanilla and beat until smooth
- Divide batter evenly between prepared pans. Bake until golden (30-35 minutes) and a cake tester comes out clean in the center.
- Turn out/transfer onto wire racks to cool, about 20 minutes
- Meanwhile, make the frosting: beat butter and milk in a large bowl, add in powdered sugar and freeze dried strawberries and beat until well combined
- Place bottom layer on a cake stand, flat side down. Spread with 1/2 frosting and 1/2 strawberry pieces. Place second cake on top of first layer, dome side down, flat side up. Press down slightly. Smooth remaining frosting on top, then decorate with strawberry pieces, enjoy.
