- Depending on the type of sausage, you can pair almost any vegetables with sausage. We eat a lot of chicken sausage and typically use vegetables like zucchini, corn, carrots, squash or sweet potato.

Greek potatoes are a signature dish of lemony potatoes that are cooked to perfection resulting in a crisp outside and soft inside. They also happen to be my all time favorite dish!
Before kids, my husband Nick and I would head to Chicago (where I grew up – we currently live in Milwaukee, a 90 min drive) and go to a Greek town restaurant on random Friday nights.

It was actually Nick who came up with this sheet pan meal. I loved it so much that I’ve had him make it again so I could share it here on the blog. For a meal to be requested on repeat, it really has to be a winner. And this sheet pan meal is.

What I love is that it’s the signature Greek potatoes, but cooked on a sheet pan, and then you just add chicken sausage and zucchini so it becomes a whole complete meal! Super easy and that is my favorite kind of recipe – one that doesn’t take too much time or thought and results in an amazing dinner.

Equipment
Ingredients
- 2 lbs potatoes cubed into 1-1.5 inch pieces (any kind of potatoes are good, we like Yukon gold but have used baby potatoes or russet)
- 1 cup chicken stock add in a 1/2 cube or 1/2 teaspoon chicken bouillon if desired, optional
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice (from a large lemon or 2 small lemons)
- 4 cloves garlic pressed or very finely chopped
- 2 tsp oregano
- 1 tsp salt
- 4 chicken sausage links cut into slices, about 6-7 slices per link
- 2 medium zucchini or summer squash cut into 1/2 moons or chopped
Instructions
- Preheat oven to 400.
- In a large bowl place potatoes along with next 6 ingredients (potatoes through salt).
- Stir, then spread onto baking sheet.
- Bake for 25 minutes, flip potatoes.
- Add chicken sausage and zucchini to the baking sheet, stir.
- Increase heat to 415. Bake for another 20 minutes or until the potatoes and chicken sausage are starting to brown, remove from oven stir and divide onto plates and enjoy.
- If you like it extra crispy, feel free to bake it an additional 10-15 minutes.
Notes
If you like your potatoes extra crispy you could let them cook an additional 10-15 minutes, so a total of 30 minutes at 415.

I love sheet pan dinners! So easy! My favorite is sheet pan chicken fajitas. Just toss some sliced chicken, peppers, onions, (or veggies of your choice) with some olive oil and taco seasoning!

I have made this with tofu instead of sausage (my youngest sister is a vegetarian so I love trying meat alternatives!) Same exact instructions, I’d just recommend making sure to drizzle a little extra EVOO on the tofu 🙂

My favorite sheet pan is asparagus, mushrooms cut in half, whole cloves of garlic – (you can add some small potatoes too) throw some springs of herbs – I like fresh thyme or rosemary and salt and pepper – Serve with a grilled steak which you can also throw on the pan after you grill it rare – leftovers make delicious cheese steak sandwiches. YUM

I love sheet pan dinners! I like to throw carrots, broccoli, and chicken thighs on a sheet pan. Just olive oil and salt on the carrots and broccoli, and then I make a rotisserie chicken blend for the chicken. Salt, pepper, paprika, garlic powder and onion powder. So good and easy!

Our favorite sheet pan dinner is roasted broccoli and cauliflower that we pick from the “winter garden “ paired with chicken or tofu. Change up seasoning for a different flavor each time. Sometimes I add fish or seafood for a real treat.

I love a sheet pan meal! I often buy a bag of frozen brussel sprouts, thaw them enough so that I can easily (and safely) halve them, throw them on a sheet pan with chicken thighs and another veggie, and use some version of a honey-mustard marinade. Healthy and easy, which are my two main criteria in cooking these days. 🙂

Made this tonight. I had a surplus red potatoes. I also added a red onion. Hearty dinner. Low prep. And I could get dishes and lunches packed while I was roasting the potatoes. The broth absorbed perfectly into the potatoes. Thank you for sharing such a good winter recipe.
