Sports nights. Late practices. Busy evenings when you’re walking in the door at 7:30 and everyone is hungry. This recipe is for those nights. Slow cooker pepperoncini chicken sandwiches are the ultimate “set it and forget it” dinner. You throw a handful of ingredients into your crock pot in the morning, and by dinnertime, your house smells incredible, and dinner is ready to pile onto buns.
The flavor is unbelievable – it tastes like you put way more effort in than you actually did. Tender shredded chicken with a tangy, zippy kick from the pepperoncini, all tucked into a soft roll. I love serving these with sweet potato fries or waffle fries or even potato chips to keep it easy.

Ingredients in pepperoncini chicken sandwiches
1.25 lbs boneless, skinless chicken breasts (2-3 breasts)
1/2 cup chicken stock
1 cup (or smaller jar) pepperoncini (with juice), pepperoncini sliced
1 teaspoon Greek seasoning
1/2 teaspoon garlic salt
1/2 teaspoon kosher salt
Kaiser rolls or buns, for serving
- Mayo, for serving
- Provolone slice, for serving (optional)
How to cook these slow cooker chicken sandwiches
- Put the chicken in a slow cooker. Add chicken stock, seasonings, pepperoncini and juice in. Cook on low for 6-8 hrs or high for 3-4 hours. Remove lid, shred chicken in the slow cooker.
- Spread a little mayonnaise on Kaiser roll, add cheese slice on bottom half of bun, then using a slotted spoon or tongs place chicken on top of cheese, place top bun on and enjoy!
Tips for Success
Don’t skip the juice – The pepperoncini juice is what gives this dish its signature tang and keeps the chicken moist.
Shred in the slow cooker – Once the chicken is tender, shred it right in the pot so it soaks up all the flavor.
Toast your buns – A quick toast under the broiler keeps the bread from getting soggy and adds a little crunch.
Adjust the spice – Pepperoncini are mild, but you can use fewer peppers for a lighter flavor or add a few jalapeños if you want more heat.
Customizations
Cheesy melt – Top bottom bun with provolone or mozzarella cheese slice, place hot shredded chicken top for a cheesy sandwich!
Healthier swap – Serve the shredded chicken in lettuce wraps or over rice or quinoa bowls instead of buns.
Different seasonings – Try Italian seasoning, ranch seasoning mix, or even Cajun spice for a fun twist.
Add veggies – Toss in sliced onions, bell peppers, or mushrooms to cook along with the chicken.
This slow cooker pepperoncini chicken is the kind of dinner that feels like a lifesaver on busy nights. Easy, comforting, and packed with flavor – it’s proof that simple recipes can still taste special. Once you try it, I promise it’ll make its way into your regular rotation.
