S’mores Cookie Cups {and our cookie and cocktail exchange party}

S’mores cookie cups – they’re pretty much one of the best cookies ever, they taste like campfire s’mores only better and in cookie form and were part of our annual cookie and cocktail exchange party we had this past weekend.

Every year we have a cookie and cocktail exchange party. People who want to enter the exchange can do so and leave with a bag full of cookies, and then also have their cookies entered into the voting. There’s a category for best tasting, best looking, and most Christmas themed.

In addition to the cookies portion we also do a cocktail exchange. People can bring a cocktail and then serve the cocktail in little glasses and then they make a display one. The display ones are entered into the cocktail voting – best tasting, best looking and most Christmas themed. There are voting cards (here are the ones I made which we used) and there are PRIZES!

This is the 4th year we’ve had the party, the whole thing is pretty neat if I do say so myself. Friends and family from all different walks of life gather to celebrate the holidays, our house is small but it’s cozy. Last year my husband came up with the idea for the dark and stormy oatmeal cream pie cookies and this year when we were talking about what cookies to make he came up with the idea for these s’mores cookie cups (I think he just wanted to use a torch haha).

These cookies have a graham cracker-sugar cookie crust, a chocolate ganache filling with a hint of bourbon and are topped with marshmallow creme which is brûléed with a torch. I made the cookie layer in little paper cups (clean up in the pan is easier this way) but when brûléing the marshmallow creme some of the edges caught fire a little, so just a note of caution that that is completely fine and normal. In fact, here’s a little video of us using the torch (we bought this one and it was absolutely fantastic!)

S'mores Cookie Cups

Prep Time 1 minute
Cook Time 6 minutes
Inactive Time 9 minutes
Total Time 16 minutes

Ingredients

  • For the cookie cups:
  • 1 cup butter (2 sticks), at room temperature
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups graham cracker crumbs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the chocolate ganache filling:
  • 1 cup semi sweet chocolate chips
  • 1 1/2 tablespoons butter
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons bourbon
  • For the topping:
  • 2 jars marshmallow creme

Instructions

  • To make the cookie cups:
  • Preheat oven to 350. Line a mini muffin pan with paper liners and set aside.
  • In the bowl of stand mixer or with a hand mixer cream together the butter and brown sugar (about 2 minutes).
  • Add in eggs and vanilla extract and beat until combined. Add in graham cracker crumbs, flour, baking soda and salt and beat until all the ingredients are incorporated. Using a tablespoon cookie scoop or a spoon, scoop 1 tablespoon of cookie batter into the lined cups. Press the dough so that a little well forms. Bake for 6 minutes. Remove from oven and use the back of a spoon to press the dough onto the sides so that the well remains. Transfer to a cooling wire rack and repeat until all the cups are made.
  • To make the chocolate ganache: in a microwave safe bowl combine the chocolate chips, butter, and heavy cream. Microwave for 30 seconds, then remove from microwave and stir. Microwave for another 30 seconds and then stir again (if the mixture doesn't come together and there are still some un-melted bits of chocolate, microwave for another 10 seconds, then stir). Stir in the vanilla extract and the bourbon. Using a spoon carefully spoon about 1 teaspoon of chocolate ganache filling into each of the ups. Allow the cookie cups to cool completely-the chocolate will harden.
  • Spoon a dollop of marshmallow cream over each cookie cup and then with a brulee food torch torch the top of the s'mores cookie cups (1-2 seconds).
  • Remove the paper liners and then serve!

      I had so much fun hosting my first ever cookie-exchange this year. Bookmarking this recipe for next year! I don’t have a kitchen torch but the idea of using one sounds really fun…..:) Would love to see more photos of your cookie and cocktail exchange!

I’ll definitely be sharing more photos in a post next year, I just always forget to take more pictures as the party is going on, you know? Yay for holidays and cookies 🙂

        Do you have cookie parties in Greece? I know they’re pretty popular here in the US, so I was curious 🙂 My husband had so much fun using the little kitchen torch-such a fun piece of equipment!

          We don’t have cookie parties here, but showing up with some dessert when you visit someone is a die hard custom we have here:) Most people buy them from pastry shops nowadays though, while in the past they were homemade. Thank you for asking for our culture:)

Ingredients:
1 1/2 cups oats
3/4 cup unsweetened flaked coconut
1/2 cup pepitas
12 pitted Medjool dates
1/2 cup dried pineapple, chopped
1/4 cup almond butter
1/4 cup raw honey
2 tablespoons coconut oil
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 350 degrees. 
Toast oats, coconut flakes and pepitas (5-8 mins), until slightly golden brown. 
Line an 8x8 inch baking dish with parchment paper.
Process the dates and pineapple in a food processor.
Transfer to a medium bowl; add the oats, and pepitas, stir to combine.
Combine the almond butter, honey and coconut oil in a small saucepan over medium heat. Cook, stirring often, until smooth, about 3 minutes.
Pour the almond butter mixture over the date mixture and stir well. Spoon the mixture into the prepared baking dish. Top with a piece of plastic wrap, and press onto the surface of the mixture. Freeze until firm, about 15 minutes.
Using parchment paper, remove the frozen mixture from the baking dish, cut into 12 bars.
Store in the refrigerator, good for 2 weeks.
