Perfectly roasted sweet potatoes are the filling of these amazing wraps which have a dilly mayo sauce. Paired with spinach and pickled red onion, this sweet potato wrap recipe is a super delicious and a healthy lunch! Instructions for both air fryer sweet potatoes and oven roasted sweet potatoes are included.
We’re always on the hunt for something filling, healthy and easy for lunch and it’s easy to get sick of salads. This wrap is the perfect alternative!

We love it most when there are various cooking methods for any one recipe – that way you can choose which is best for you based on what appliances you do/don’t have!
If you plan to roast the sweet potatoes in the oven, plan for about 35 minutes, but if you’re using an air fryer, you can have them done in about 15 minutes!

How do you ensure all of your potatoes cook the same?
- All of you have to do is simply cut the sweet potatoes in uniform pieces.

What do you put in a sweet potato wrap?
- Seasoned, roasted sweet potatoes
- Dilly mayonnaise
- Spinach
- Picked red onions or vegetables (optional)
- You could use quick pickled onions (like this recipe) or quick pickled vegetables

If you’d prefer to make these into burritos, that would be delicious too! Just pick a tortilla instead of a wrap.

And the secret ingredient to this sweet potato wrap is what we add on top at the end. We used Trader Joe’s chili lime salt but you could use Tajin – if you don’t have any of those you could mix together paprika, chili powder, cumin, garlic powder, onion powder and salt.

For the sweet potatoes
- 1 sweet potato large (1 lb.) cut into 1 inch cubes
- 1 teaspoon chili lime salt
- 1/2 teaspoon kosher salt
- 2 Tablespoons olive oil
For the sauce
- 1 Tablespoon dill fresh and chopped
- 1/4 teaspoon garlic salt
- 1/3 cup mayonnaise
- 1/2 lemon juiced (juice from 1/2 lemon)
- Multi-grain wraps
- 4 handfuls spinach (about 3 cups)
- Pickled red onion or vegetables optional
Instructions
- Chop sweet potato into 1" cubes.
- Mix sweet potatoes, chili lime salt and kosher salt together in a bowl. Drizzle with olive oil. Cook sweet potatoes.
To make in an air fryer
- Cook at 400 for 15 minutes, tossing halfway through.
To bake
- Preheat oven to 400 degrees.
- Bake for 35 minutes, checking at around 20 minutes for doneness.
To make the sauce
- Combine fresh dill, garlic salt, mayonnaise and lemon juice. Stir to combine.
To assemble wraps
- Lay a wrap flat and top with sweet potatoes. Drizzle sauce on top of sweet potatoes. Add spinach and pickled red onions or veggies on top. Roll the wrap and enjoy.

We love these. I’ve also been adding chicken and other veggies (onion, bell pepper). I don’t own an air fryer, so I do them in the oven in a sheet pan covered with foil.
My go to easy lunch for the family is BLT sandwiches,or our homemade canned tomato soup and grilled cheese sandwiches.

I love using leftovers in my salads. I start with lettuce,kale or spinach, add leftover chicken or whatever protein is around. Then add grilled or fresh veggies, a little cheese or canned cannelini or chick peas. Then drizzle with olive oil and balsamic glaze. It is quick and easy and I use up leftovers that are cluttering my fridge.

Yum! I’ve recently started loving canned salmon. I use it the same way (bread, crackers, wraps) but my new favorite is to make a rice bowl with 90 second rice, the canned salmon, 1/2 an avocado and some seaweed snacks (nori) – tastes just like sushi!

My go to lunch is usually fresh lettuce – often from my hydroponic floating bed – leftover veggies or fresh from the garden, a big scoop of cottage cheese topped with Manitoba Hemp Hearts, pumpkin seeds and sunflower seeds. I like to use homemade dressings like balsamic and oil.

I always have items on hand to make a quick salad. The Tyson Blackened Chicken strips or Black Pepper & Herb strips heat up easily. Then I toss spinach and kale in a bowl, top with chicken, a few cut up strawberries and grape tomatoes, some sunflower seeds, and a salad topping of chopped nuts and dried cranberries. It is really filling!
