In the weekly meal plan, you can find breakfast, lunch and dinner for five days of the week, plus a bonus snack or dessert (and this week’s bonus is a good one!). Make sure to select which recipes you want to make and easily create a grocery list!
A few notes about the weekly meal plan:

- I used this griddle to make the pancakes, and used a scoop like this one to pour the batter onto the griddle so that the pancakes were all roughly the same size!

- You want about 4 cups roasted veggies, can be any combination of veggiesVegetables can be roasted or grilled ahead of time
- Lasagna can be assembled ahead of time and baked at a later time (350 degrees for 45 minutes, let cool 20 minutes before serving)
- Can be frozen either cooked or uncooked

- Make and bake immediately – then serve and enjoy.
- Make ahead- put in the freezer unbaked (just be careful transferring it so it doesn’t spill when putting it in the freezer) and then put it directly from the freezer into the oven.
- Make and bake ahead, then put it in the freezer in individual servings so all you have to do is warm it and go.
- Peach and Tomato Panzanella Salad
- To turn this into a make-ahead dish, make the fruit mixture with the dressing and just keep it separate from the croutons. When you are ready to eat, simply add both to a bowl and combine to enjoy!
- The Best Nachos Ever
- These nachos are made with my 3 ingredient pulled pork
- My husband really likes bold spices and said he adds an extra teaspoon of cumin and chili powder when I’m not looking, so if you like it a little spicier feel free to add more spices!
- Avocado Toast with Hard-Boiled Eggs and Balsamic Roasted Tomatoes
- I used these balsamic roasted tomatoes!
- Jam Margaritas Recipe
- This jam margarita is so flexible because you really can use any jam you like. I’ve used strawberry, but I’ve also tried mixed berry and apricot. You can just pick your favorite! I bet it would be super delicious with a spicy jam as well.
- Chocolate Chip Waffles with Strawberry Cream Cheese Sauce
- For the strawberry cream cheese sauce, you could opt to use fresh strawberries instead of frozen. But if you do, the cream cheese sauce will not be as liquidy.
- Waffle note: depending on what type of liquid you use, you may have to add a little extra liquid for the batter if the batter is too thick. For example, if you use whole milk, use an additional tablespoon to 1/4 cup water, or if you use a thicker milk (like buttermilk) you may need to use a little extra liquid.
- When making the waffles, you can either use buttermilk or make your own! To make your own, you simply combine milk and lemon juice and let it sit for 5 minutes.
- 5 Ingredient Cuban Air Fryer Empanadas
- If you are using a pie crust, to cut it in circles I used a biscuit cutter!
- 5 Ingredient Banana Pistachio Coconut Smoothie
- If using fresh banana add in 1/2 cup of ice.[br]If you want the smoothie super smooth, you could blend the pistachios and coconut flakes on high, creating almost a powder, before adding the other ingredients and blending again.
- 5 Ingredient Skillet Pizza Pot Pie Recipe
- You can use pre-made pizza crust or you can make a homemade pizza crust.
- The oven-safe skillet I use is a LeCreuset, but you can find a more cost-effective option that works great as well!
- I use diced tomatoes with garlic and onion, but you can certainly use plain diced tomatoes and add some garlic.
