Healthy Apple Cider Donuts with a Tahini Maple Glaze

What’s that? A HEALTHY donut!? You bet! These healthy apple cider donuts with a tahini maple glaze were a recipe that caught my eye while flipping through a magazine and then one I HAD to make after our family visit to the apple orchard.

Ingredients

  • 1/3 cup unflitered apple cider
  • 1 medium apple cored and diced about 1 cup
  • 3 oz. whole wheat pastry flour about 2/3 cup plus 2 tablespoons
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 1/3 cup sugar
  • 2 tablespoons whole-milk Greek yogurt
  • 1 1/2 tablespoons canola oil
  • 1 large egg white
  • Cooking spray
  • For the glaze:
  • 1 tablespoon tahini sesame seed paste
  • 1 tablespoon dark maple syrup
  • 1 teaspoon water

Instructions

  • Preheat oven to 350 degrees.
  • Combine apple cider and apples in a saucepan over medium-high heat; cover and cook 10 minutes. Uncover and cook 2 minutes. Remove from heat; cool 10 minutes. Pour apple mixture into a blender; process until smooth.
  • Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, cinnamon, and salt in a bowl; stir with a whisk.
  • Combine apple mixture, sugar, yogurt, oil and egg white in a medium bowl; stir with a whisk. Add yogurt mixture to flour mixture and stir until combined
  • Coat a 6 cavity donut pan with cooking spray. Spoon batter evenly into 12 cavities. Bake at 350 for 12 minutes, or until donuts spring back when lightly pressed. Cool in pan for 2 minutes. Invert donuts onto wire rack. Cool completely
  • Combine tahini and maple syrup stirring with a whisk. Add water; whisk until smooth.
  • Spread glaze over tops of donuts. Let stand until glaze is set, then enjoy.

Notes

Recipe is for 6 donuts, simply double the recipe if your donut pan is a 12 donut pan
