  • 1 7-8 lb whole turkey breast thawed
  • 1 medium yellow onion cut into large chunks (I usually just quarter the onion)
  • 2 large carrots cut into large pieces (each carrot into 4s)
  • 2 celery stalks cut into large pieces (each stalk cut into 4s)
  • 1 3/4 cups chicken stock
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon fresh ground pepper
  • For gravy from turkey cooking liquid:
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 tablespoon soy sauce
  • 2 cups of the cooking liquid
  • dash of salt and pepper

  • Remove the turkey breast from the packaging and discard the gravy packet (unless you'd like to use it later).
  • Add half of the onions, carrots and celery to the the bottom of a 6 qt Instant Pot.
  • Add the turkey breast to the Instant Pot - I put the large cavity facing the up and to the side (it will be a tight fit)
  • Place the remaining onions, carrots and celery around the turkey. Pour the chicken stock over the turkey breast and vegetables. Sprinkle with salt, garlic salt and pepper
  • Place the Instant Pot lid on and place it in the seal/lock position with the vent closed.
  • Cook on manual HIGH for 1 hour. Quick release and open the lid when the pressure subsides.
  • Check the turkey breast temperature, you want it to be at least 165 (or higher is ok).
  • Carefully, using tongs or two large forks, lift the turkey breast out of the instant pot and place it on a large cutting board or on a serving platter. Slice and enjoy!

To make gravy out of turkey drippings/cooking liquid:

  • In a saucepan over medium-high heat melt butter and add in flour - it will be very thick, whisk vigorously until a smooth paste forms.
  • Slowly add the soy sauce and turkey cooking liquid and whisk until no more lumps remains. Cook, stirring occasionally, until the gravy comes to a slow boil, then reduce heat to low and cook until the gravy thickens to desired consistency (about 5 minutes). Serve over turkey and enjoy!

I removed the skin before serving. You could put the turkey into a baking dish and place it under a broiler for 3-5 minutes to turn it brown.
