5 Ingredient Cinnamon Spice Roasted Carrots

These 5 ingredient cinnamon spice roasted carrots are one of my most favorite ways to enjoy the humble carrot. The slight spice makes this dish a favorite during fall months and perfect for Thanksgiving.

  • 1 Lb Carrots ends cuts off and carrots cut into matchsticks
  • 2 Tbs Extra Virgin Olive Oil
  • 1/2 Red Onion finely sliced
  • 1/4 tsp Cinnamon
  • 1/8 tsp Cayenne
  • 1/2 tsp salt


  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
  • In a bowl place carrots and onions, pour olive oil and toss with a spoon. Then sprinkle cinnamon, cayenne and salt over the carrots and onions and stir together so that all the carrots and onions are covered with cinnamon and spice. Place the carrots and onions on the prepared baking sheet, and bake for 15 minutes, then flip, and cook for another 10 minutes or until the carrot ends are brown.
  • Remove from oven and transfer to a serving plate and enjoy!
