Preheat oven to 350. Line a baking sheet with aluminum foil and then spread 1 tsp of the olive oil onto the foil.
Remove ends from plantains and remove skin (the skin is very tough, so be careful, but make sure it is all off.)
Cut the plantains in as uniform slices as you can. Put in a bowl and toss with remaining olive oil and salt. Place in a single layer on the baking sheet.
Bake for 20 minutes, then check for doneness. If they're not a little brown, they're not done, bake for a remaining 5-10 minutes until you start to see brown on some of the plantains (i like them a little darker, it gives them more flavor).
Remove from oven and allow to cool for 5 minutes, then remove from baking sheet, place in a bowl and enjoy
Store in a ziplock bag or air tight container for up to two days.
