2 Ingredient Plantain Chips

  • 2 plantains peeled
  • 2 tablespoons extra virgin olive oil divided
  • 1 tsp salt optional


  • Preheat oven to 350. Line a baking sheet with aluminum foil and then spread 1 tsp of the olive oil onto the foil.
  • Remove ends from plantains and remove skin (the skin is very tough, so be careful, but make sure it is all off.)
  • Cut the plantains in as uniform slices as you can. Put in a bowl and toss with remaining olive oil and salt. Place in a single layer on the baking sheet.
  • Bake for 20 minutes, then check for doneness. If they're not a little brown, they're not done, bake for a remaining 5-10 minutes until you start to see brown on some of the plantains (i like them a little darker, it gives them more flavor).
  • Remove from oven and allow to cool for 5 minutes, then remove from baking sheet, place in a bowl and enjoy


Store in a ziplock bag or air tight container for up to two days.
