Whole Wheat Peanut Butter Cookie Pizza

This whole wheat peanut butter cookie pizza is a fun treat to make as an alternative to traditional cookies!

Servings: 8 large slices

Ingredients

  • 6 Tbs butter at room temperature
  • 2 Tbs peanut butter creamy (I use natural no-stir peanut butter)
  • 1/2 cup granulated sugar
  • 1/3 cup packed brown sugar light or dark is ok
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup whole wheat pastry flour
  • 1/2 tsp baking soda
  • 1/2 cup Reeses pieces or M&Ms or chocolate chips

Instructions

  • Preheat oven to 350
  • In a bowl combine butter, peanut butter, sugar and brown sugar, mix with a wooden spoon. Add in egg and vanilla extract and stir. Add in whole wheat pastry flour and baking soda and stir to combine, then add in Reese's pieces and stir to combine. 
  • Spray a cake pan or oven safe skillet with cooking spray. Spoon batter into the pan and bake for 18-22 minutes, until the center is just set and edges are beginning to turn golden brown. 
  • Let cool, then slice and enjoy!

I ended up cutting each large slice in 2 because the 8 slices are pretty sizeable!
