Butterscotch Cornflake Clusters

– 1 bag butterscotch chips (11 ounces) – 4 cups cornflakes

INGREDIENTS

Line two baking sheets with parchment paper (or just roll out parchment paper or wax paper and set it on an empty counter or flat surface).

Microwave the butterscotch chips in a large microwave-safe bowl for 30 seconds on high. Then remove from the microwave and stir. Repeat, microwaving for 30 seconds and stirring, until the butterscotch is smooth and creamy.

Carefully stir in the cornflakes until they are coated with butterscotch.

Using a tablespoon-size cookie scoop or spoon, scoop a tablespoonful of the mixture onto the prepared parchment paper.

Allow the clusters to cool for about an hour (or until they have set) and then transfer to a tin or serving plate and enjoy.

Optional - you can add festive sprinkles and put the clusters into mini muffin cups!
