Beef and Vegetable Soup

– 1 1/2 Tablespoons olive oil – 1 onion  – 4 garlic cloves – 2 celery  – 4 large carrots  – 2 bell peppers  – 2 zucchini  – 2 roma tomatoes  – 1 Tablespoon Italian seasoning – 2 teaspoons salt – 1 lb. ground beef – 6 cups beef broth – 1 cup white rice – 1 1/2 cups tomato sauce – Grated parmesan cheese

INGREDIENTS

In a large heavy bottom soup pot add in the olive oil and onion and cook on high for 2-3 minutes,

Then add the garlic cloves, celery, carrots, bell pepper and zucchini and cook, stirring occasionally for 5 minutes.

Add in the tomatoes, Italian seasoning and salt and cook for another 5 minutes. Then add in the ground beef and cook for 5 minutes, breaking the meat up. Cook until the meat is no longer pink.

Add in the beef broth, rice and tomato sauce and lower heat to medium and cook for 15 minutes, or until rice is cooked through.

Remove from heat and ladle into a bowl. Top with grated parmesan and enjoy!
