This hearty beef and vegetable soup with rice is perfect for cold winter days. It’s a great recipe to make and freeze because it’s super simple (and still delicious) when re-heated.
If you open your fridge and wonder what you should do with those vegetables staring back at you, this soup is a great choice. It’s one of those recipes that is great for using up whatever veggies you have on hand.

For this version of the soup, Phi used the following vegetables:
- Celery
- Carrots
- Peppers
- Zucchini
But the best part is, you can interchange them as you’d like. For example, you could use green or yellow zucchini, sweet potatoes, butternut squash or even eggplant.

How to make beef and vegetable soup
- Cook olive oil and onion on high for 2-3 minutes. Add the garlic cloves, celery, carrots, bell pepper and zucchini and cook, stirring occasionally for 5 minutes.
- Add in the tomatoes, Italian seasoning and salt and cook for another 5 minutes. Add in the ground beef and cook for 5 minutes, breaking the meat up. Cook until the meat is no longer pink.
- Add in the beef broth, rice and tomato sauce and lower heat to medium and cook for 15 minutes, or until rice is cooked through.
- Remove from heat and ladle into a bowl. Top with grated parmesan and enjoy.

Can beef and vegetable soup be frozen?
- Yes! Absolutely. This soup is great to freeze because it re-heats so easily! Phi loves to store soup in these jars, then simply re-heat in the microwave until hot all the way through.

Ingredients
- 1 1/2 Tablespoons olive oil
- 1 onion chopped

I like to make a simple potato soup. Potato, onion, garlic. Maybe a carrot for color (and extra veggies). After cooking, add some milk to make the water turn opaque (looks better). And a few pats of butter. It’s pretty simple, but tastes really good!
