20 Minute Turkey Taco Salad with Blistered Tomatoes

Ingredients

  • 1.25 lbs Lean Ground Turkey
  • 1 Pint Cherry Tomatoes
  • 1 tsp olive oil
  • 1 tsp garlic flavored olive oil or grape seed oil
  • 1 Packet 1oz Taco Seasoning
  • 1 Cup Four Cheese Mexican Cheese Blend made with 2% milk or cheddar
  • 1/2 cup Salsa heat level you like, I used medium
  • 4 Tbs Sour Cream
  • 1 Avocado
  • 4 handfuls of tortilla chips
  • 1 bag 1lb or more of Hearts of Romaine Lettuce (or any other desired kind of lettuce)

Instructions

  • Start by cooking the ground turkey with 1 tsp olive oil in a frying pan. When most of the turkey starts turning white (about 10 minutes) add the taco seasoning packet and continue to cook until done (another 5 minutes).
  • While the ground turkey is cooking, in another pan blister the grape tomatoes. Do this by heating up the garlic flavored olive oil or grape seed oil for a minute, then add the tomatoes and stir only occasionally until they start to look 'blistered' or a little shriveled (about 10 minutes). Season with some salt and pepper (optional).
  • To assemble the salad set out 4 bowls, divide salad between the bowls. top with salsa, avocados, ground turkey, tomatoes, cheese, salsa, crumble up some tortilla chips and top with a dollop of sour cream, and viola you have yourself a 20 minute turkey taco salad with blistered tomatoes.
