Mix ground chicken or turkey with egg, Italian seasoning, garlic salt, and breadcrumbs. Roll into meatballs. I usually use a 1.5 tbs cookie scoop to get them uniform.
Heat olive oil and brown the meatballs for about 5 minutes. They don’t need to be cooked through yet.
Now you'll build the sauce. Add cherry tomatoes to the same pan the meatballs are in and cook until they start to burst.
Pour in the white wine and let it simmer a bit.
Add the crushed garlic, then the chicken broth, scraping up all the flavorful browned bits.
Stir in the heavy cream and add in the salt (a pinch or two depending on how salty you like things) and simmer gently until the sauce lightly thickens.
Let everything simmer together until the meatballs are cooked through (about 3 minutes) and the sauce is silky. Don't let the sauce cook down too much, you still want some to enjoy with the meatballs. Sprinkle parsley over meatballs if using.
