Marry Me Meatballs

These Marry Me Meatballs are a flavorful twist on the famous Marry Me Chicken-juicy ground chicken or turkey meatballs cooked in a creamy tomato, garlic, and white wine sauce. Simple, comforting, and perfect served with pasta, rice, or mashed potatoes.

Ingredients

For the meatballs

  • 1.25 lbs ground chicken or turkey
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic salt
  • 1/2 cup Italian seasoned breadcrumbs or regular breadcrumbs with 1/2 teaspoon Italian seasoning
  • 1 tablespoon extra virgin olive oil

For the Sauce

  • 1 pint cherry tomatoes
  • 2 cloves garlic crushed
  • 1 cup white wine or use chicken broth
  • 1 cup heavy cream
  • heavy pinch of salt
  • fresh parsley chopped, for serving, optional

Instructions

  • Mix ground chicken or turkey with egg, Italian seasoning, garlic salt, and breadcrumbs. Roll into meatballs. I usually use a 1.5 tbs cookie scoop to get them uniform.
  • Heat olive oil and brown the meatballs for about 5 minutes. They don’t need to be cooked through yet.
  • Now you'll build the sauce. Add cherry tomatoes to the same pan the meatballs are in and cook until they start to burst.
  • Pour in the white wine and let it simmer a bit.
  • Add the crushed garlic, then the chicken broth, scraping up all the flavorful browned bits.
  • Stir in the heavy cream and add in the salt (a pinch or two depending on how salty you like things) and simmer gently until the sauce lightly thickens.
  • Let everything simmer together until the meatballs are cooked through (about 3 minutes) and the sauce is silky. Don't let the sauce cook down too much, you still want some to enjoy with the meatballs. Sprinkle parsley over meatballs if using.
