What is “Elote” Flavor?
- Elotes is a Mexican street food of corn on the cob, which has been grilled then covered in a creamy sauce of mayonnaise and seasonings like Tajin (a chile and lime zest) seasoning salt and then covered in cotija cheese and cilantro. It sounds like a lot, but it is SO incredibly delicious. Having grown up in Chicago, it’s a dish that brings up memories of eating it right on the street corner.
