This recipe is a wonderful meal recipe that adds vegetables to a normally no vegetable dish!
Ingredients:
1/4 cup Parsley
1/2 onion
2 garlic cloves
1 cup Greek yogurt
1/2 cup skim milk
8oz Sharp Cheddar block
1/2 cup Parmesean cheese (1/4 cup for cheese sauce, 1/4 cup for topping)
1/2 cup Panko bread crumbs
1 head cauliflower
1 lb macaroni
1 tbs salt
3/4 tsp mustard powder
1 pat butter (1/2 tbs)
Directions:
Head oven to 350. Boil big pot of water. Cut up cauliflower, and put the macaroni and cauliflower together in the boiling water-cook until pasta is done (mine was about 8-10 min. While the pasta and cauliflower are boiling, chop the parsley, onion, and garlic cloves. Fry with pat of putter in a sauce pan. When onion is translucent add the yogurt, milk, cheese and seasonings. Whisk all the ingredients together until a cheesy sauce is formed. When pasta and cauliflower are done, strain water and put back in pot, add the sauce and stir. In a separate bowl mix together the Panko bread crumbs and Parmesan cheese. Put mixture into baking dish, and sprinkle Panko & Parmesan cheese on top, and bake for about 20 min-or until top is golden brown. Remove from oven and allow to cool for 5-10 min before serving.
