Sausage Tortellini Tomato Soup

This easy sausage tortellini tomato soup is a cozy one-pot family dinner made with simple ingredients, packed with flavor, and perfect for busy weeknights.

Ingredients

  • 12 ounces hot Italian sausage
  • 1.5 teaspoons extra virgin olive oil
  • 2 cloves garlic
  • 4 cups V8 juice (tomato juice)
  • 3 cups chicken broth or chicken bone broth
  • 1 Package (8.8 oz) cheese tortellini any kind of tortellini would work (spinach, meat, etc), you can use dried or fresh, and you can use an 8 -12 oz package.
  • 6 ounces baby spinch chopped (6 cups)

Instructions

  • Start by browning the sausage in the olive oil in a large pot (you'll make the whole soup in the pot.) Cook for about 12-15 minutes, turning every so often, until brown on all sides and mostly cooked through. Remove from pot and slice and return to pot and cook for another 3-5 minutes until no more pink.

  • Add garlic and cook until fragrant, about 30 seconds, then stir in the V8 juice and broth, bring to a gentle simmer, about 4 minutes, then add the tortellini into soup and simmer, stirring occasionally until tender, about 8 minutes. Turn off heat and stir in spinach and let it wilt, about 1 minute. Season with salt and pepper to taste and enjoy

    Michael Romano’s Secret-Ingredient Soup from Epicurious is my fav – So delicious and I take the sausage and roll into little meatballs instead of breaking it up.
