Ingredients
- 1.5 tablespoons extra virgin olive oil
- 1 small-medium yellow onion chopped
- 1 cup white wine a chardonnay or other dry white would work
- 1 pound ground turkey (or turkey Italian sausage, casings removed)
- 4 cloves garlic crushed or finely chopped
- 1 teaspoon Italian seasoning
- heavy pinch of salt
- 2 tablespoons tomato paste
- 1 can petite diced tomatoes 1 (14.5oz can)
- 1 can cannellini beans 1 (15.5 oz can)
- 6 cup chicken broth
- 8 oz pasta fusilloni or macaroni
- 1-2 cup baby spinach chopped
- 1-3 tablespoons grated parmesan cheese optional -for topping
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Pour in the white wine to deglaze the pan, scraping up any browned bits. Cook for 2 minutes to let the wine reduce slightly.
