Yesterday evening my fiance and I took our first trip to Costco together. It was so much fun! They have awesome bulk products. Among the favorites was definitely the cheese section. I love cheese, they had tons of cheese, we bought tons of cheese (my freezer has about 3 bricks of cheese in it!). What to do with all this cheese you may ask? Well, make home-made macaroni and cheese of course! And what goes with macaroni and cheese? Hot dogs do-especially high quality Usinger ones that we just so happened to find at Costco as well.
Ingredients:
1 box Macaroni
2 cups shredded cheese (I used an Irish Cheddar and a cheese that is a cheddar made like a Parmesan cheese-so good!)
1 tbs flour
1 package high quality hot dogs
3/4 cup skim milk
2-3 tbs butter
1/2 tsp mustard powder
1/2 tsp paprika
1/2 tsp salt
Directions:
Boil water for pasta in one pot, and in second pot boil water for hot dogs. Cook pasta according to directions. While pasta is cooking shred the cheese and put in a bowl, mix with the 1 tbs flour. When pasta is done, put in a strainer. Put the hot dogs in the boiling water at this point-they only need about 5-6 min. While pasta is still in strainer, melt butter and then add the milk to the pot, heat to a boil. Add pasta back, turn off heat, and slowly add the shredded cheese and mustard powder, paprika, and salt. Stir until everything is blended.
Serve in bowl with hot dog cut in slices put around the edge! It is so yummy!
