Weekly Meal Plan 3/4/24-3/8/24

Time for the weekly meal plan. This week there’s a cake added because it’s my birthday! Hopefully you’ll find some inspiration in this meal plan and it takes a little stress out of your week by helping you select recipes and create an easy grocery list.  Happy meal planning!

Notes from this week’s meal plan:

Fruit and Nut Muesli Bread Rounds Recipe

  • This recipe is a re-creation of one of the items in the protein box from Starbucks.
  • You can freeze this recipe and have fresh bread waiting for you in your freezer whenever you need it.  To freeze them simply allow the bread rounds to cool completely, then store in a freezer storage bag. When ready to enjoy, remove a round from the freezer and allow it to come to defrost on the counter, or microwave for 30 seconds.
  • You can use 1 1/2 cups already made muesli, instead of the 1/4 cup each of the different dried fruit and nuts and omit the 1/4 cup oats

Instant Pot Vegetarian Chili

  • This recipe makes plenty for leftovers
  • Eggplant is the ingredient that makes it a hearty chili
  • Customize the recipe to include almost any veggies that you have on hand
  • Serve with with cornbread and avocado as a topping.

5 Ingredient Broccoli Egg Breakfast Bowls Recipe

  • Quick tip: once an avocado is at proper ripeness level, put it in the fridge to stop the ripening process

Vanilla scones with orange glaze

  • This recipe is a mixture of two of my favorite baked treats – the petite vanilla scones that are oh so yummy from Starbucks and the orange scones from Panera.
  • You can substitute the orange glaze with lemon if you prefer
  • Make these scones ahead, freeze and thaw for a prepped ahead breakfast recipe

5 Ingredient Skillet Pizza Pot Pie Recipe

  • You can use pre-made pizza crust or you can make a  homemade pizza crust.
  • The oven-safe skillet I use is a LeCreuset, but you can find a more cost-effective option that works great as well!
  • I use diced tomatoes with garlic and onion, but you can certainly use plain diced tomatoes and add some garlic.
