Weekly Meal Plan 5/10 – 5/16

As always, the weekly meal plan is full of recipes to keep you and your family fed all week long.  Plus, I bet you’ll have plenty of leftovers and we’ve even included a bonus dessert recipe this week.

Notes on recipes for the weekly meal plan:

  • Air Fryer Breakfast Recipe – Banana Cinnamon Roll Muffins
    • If you don’t have an air fryer, bake muffins in a muffin pan in an oven at 350 for 28 minute.
  • Anything Goes Big Batch Granola
    • My two favorite toppings combinations:
      1. Pepita coconut (adjust amounts) –  1/2 cup pepitas – pumpkin seeds, ½ cup raisins, 1 cup unsweetened coconut flakes, 1 cup chopped pecans
      2. Chocolate cherry – 1 cup dried cherries, 1 cup chocolate chunks, 1 cup unsweetened coconut flakes

      *if using chocolate, add at the end with 5 minutes left of baking time.

  • Enchiladas with Cheese Sauce
    • I made these enchiladas with ground turkey, but these could easily be made with ground beef or ground chicken instead or use a rotisserie chicken that you can buy already made at the grocery store!
  • Scrambled Eggs and Toast Recipe
    • Use a good pan – we have this smaller nonstick pan, it’s a Calphalon pan and came with this set of two.
    • Use a spatula– when cooking eggs, it’s best to use a silicone spatula, Ben LOVES spatulas so we have so so many of them, we love this colorful set.
    • Cook the eggs low and slow – for scrambled eggs, it’s best to cook them over medium-low heat, don’t rush it, if you cook them on high it will dry them out.
    • Remove pan from heat – remove the pan with eggs from the heat as soon as they start to pull back from the pan, don’t let them overcook, because eggs continue cooking from residual heat of the pan.
    • Start the toast when you add the eggs to the pan
  • Chicken With Creamy Mustard Sauce
    • You can use chicken thighs or chicken breasts
    • You can prep ahead by mincing the garlic and chopping the shallot
    • If you don’t have white wine, you can use chicken broth
    • You can use an onion in place of a shallot
    • If you want more of a saucy dish, you can double the sauce ingredients!
  • Instant Pot Cheddar Turkey Meatloaf Dinner Recipe
    • I like using oats in the turkey meatloaf, because they plump up and absorb the milk and make for a juicy end product, but feel free to use breadcrumbs instead. I like using panko breadcrumbs. If you like a crispy crust on your meatloaf, broil the meat loaf in a toaster oven for a few minutes until the glaze on top becomes bubbly.
  • Salad with Candied Nuts and/or Seeds Recipe
    • This makes 6-8 side salads or 3-4 larger salads
