I almost talked myself out of sharing these 5-Ingredient BBQ Meatballs with Mashed Potatoes and Peas because they felt too simple – but then I realized I make this dinner ALL the time, which is exactly why it belongs here. It’s basically the ultimate heat-and-eat meal: saucy BBQ meatballs, creamy mashed potatoes bulked up with riced cauliflower, and peas on the side. It’s especially perfect after sports or activity nights when everyone is hungry and I need dinner on the table without actually doing much cooking.

No—and honestly, that’s the entire reason I wanted to share it. Sometimes the recipes I make most often aren’t really “recipes” at all; they’re combinations of a few shortcuts that somehow become a dinner everyone actually eats. This is one of those meals for us. I keep the ingredients around because I know I can get a filling dinner onto the table with almost no thought or prep, and after a busy sports night, that is exactly what I need.

Tips for Success

  • Use fully cooked frozen meatballs so all you need to do is heat them through.
  • Add the barbecue sauce after the meatballs are hot, then let everything simmer together for a few minutes so the sauce coats the meatballs.
  • Heat the mashed potatoes first, then stir in the riced cauliflower so everything warms evenly.
  • If your cauliflower releases extra moisture, let the potato mixture cook for another minute or two until it looks creamy rather than watery.
  • The meatballs are ready when they’re hot all the way through and completely coated in warm barbecue sauce.
  • Keep an extra splash of barbecue sauce nearby when serving—some people in my house always want more.

If you know you’ll have a particularly busy evening, put the frozen meatballs into the slow cooker with barbecue sauce earlier in the day and let them heat through on low. Then all you have to do at dinnertime is warm the potatoes, cauliflower, and peas.

  • Large nonstick skillet (I love/have this set): Gives the meatballs enough room to heat evenly and makes sticky barbecue sauce cleanup much easier.
  • Glass meal-prep containers: This meal reheats really well, so I love portioning leftovers into containers for easy lunches.
  • Silicone spatula: Helpful for stirring the mashed potatoes and riced cauliflower together without everything sticking to the pan.

  • Can I cook the meatballs from frozen? Yes. Fully cooked frozen meatballs can be heated directly from frozen. Follow the package directions and make sure they’re hot all the way through before adding the barbecue sauce.
  • Can I make BBQ meatballs in the slow cooker? Yes. Add frozen fully cooked meatballs and barbecue sauce to the slow cooker and heat on low until warmed through (6 hrs).
  • Can you taste the cauliflower in the mashed potatoes? Not much, especially when you use about half a package mixed into prepared mashed potatoes. It mostly just blends in and adds a little extra vegetable without changing the meal very much.
  • What kind of meatballs work best? I love the Italian-style meatballs from Costco, but any fully cooked frozen meatball you like will work.
  • What barbecue sauce should I use? Use your favorite. I usually reach for Stubb’s Original because I like its smoky, savory flavor without being overly sweet.

  • Store: Keep leftovers in airtight containers in the refrigerator for up to four days.
  • Meal prep: Portion the meatballs, potato-cauliflower mixture, and peas into individual containers for easy grab-and-go lunches.
  • Reheat: Microwave until everything is hot, stirring the potatoes halfway through if needed.
  • Refresh: Add a small splash of barbecue sauce to the meatballs after reheating if they look a little dry.

Ingredients

  • 25-35 meatballs Italian style, fully cooked, frozen Use as many meatballs as you need for your family. I like the fully cooked Italian-style frozen meatballs, about 2 pounds, from Costco
  • 1 cup BBQ sauce More if using more meatballs, I like using about 1/2 jar, Stubbs Original brand
  • 1 package mashed potatoes, premade or frozen 1 package prepared frozen or refrigerated mashed potatoes; I like the Trader Joe’s mashed potatoes
  • 1/2 package riced cauliflower, frozen I like Trader Joe’s
  • 1 package steam-in-bag package frozen peas

Instructions

  • Add the frozen fully cooked meatballs to a large skillet or pot (I like nonstick) and heat according to the package directions until hot all the way through.
  • Pour approximately 1/2 jar of barbecue sauce over the warmed meatballs. Stir until evenly coated, then cook for another 2–3 minutes over medium-low heat until the sauce is warm and slightly thickened.
  • In a separate saucepan, prepare the mashed potatoes according to the package directions.
  • Add approximately 1/2 package of riced cauliflower to the mashed potatoes. Stir together over medium heat until the cauliflower is completely heated through and the mixture is creamy. If the cauliflower releases extra moisture, continue cooking for another minute or two.
  • Microwave the steam-in-bag peas according to the package directions.
  • Divide the mashed potato and cauliflower mixture among plates. Add the BBQ meatballs and peas, spooning extra barbecue sauce over the meatballs if desired.
  • Serve warm and enjoy.
