This 5 ingredient shortbread cookie ice cream sundae recipe is my go-to last minute dessert option! It’s seriously so easy to make and even better to enjoy.
I am all about short-cut or semi-homemade recipes. They are super delicious and much more realistic for busy parents like me. This ice cream sundae reminds me a lot of my easy dessert with peaches (which is like eating peach pie ala mode, but made with only 5 ingredients!)
In case you’re not familiar with what I mean by semi-homemade, here’s a great example. For this recipe, you simply buy shortbread cookies (you can even use girl scout cookies) and buy ice cream and a fruit and combine. No homemade shortbread or churning your own ice cream here! Alternatively, you can use cool whip if you don’t have ice cream on hand.
This recipe is one of those great short-cut options. It’s my signature dessert if we need a last minute dessert that seems fancy but is super easy.
The best part about this 5 ingredient shortbread cookie ice cream sundae recipe is not only is it a quick, semi-homemade, “cheater” recipe, but it only takes 5 ingredients to make this delicious dish. <- I’m all about easy dessert recipes!
You make this ice cream sundae by macerating berries (I use raspberries or strawberries) in a dish. I also like to add a bit of lemon to this recipe for a zippy addition. I love how it combines with the raspberries. But, if you don’t like tangy lemon flavors, feel free to add a teaspoon of sugar with the lemon juice when macerating your berries. Then you add some vanilla ice cream, shortbread cookies, and that’s it!
You could also choose to use strawberries for this recipe. I prefer the raspberries because the combination of lemon juice and vanilla extract helps make a delicious sauce for the sundae!
For this recipe, I used my favorite mini glass bowls with lids from Crate and Barrel. I love them! They’re perfect for serving ice cream or storing little snacks in!

5 Ingredient Shortbread Cookie Ice Cream Sundae
Ingredients
- 1/4 cup raspberries
- 1/2 tsp. vanilla extract
- 1/2 tsp. lemon juice (1 generous squeeze)
- 2 shortbread cookies cut or crushed up
- 1 scoop vanilla ice cream
Instructions
- Put raspberries, vanilla and lemon juice in a bowl. Using a fork, mix/press together so that the berries and juices come together, but some pieces of fruit still remain.
- Add vanilla ice cream and crushed up cookies. Enjoy!
Notes
- You could use whipped topping instead of ice cream.
- I also love to crush up girl scout cookies as a great option!
