Is there a more refreshing summer cocktail than a mojito? As I was cooking up a storm (literally, my kitchen looks like it has been hit) of different dishes containing fresh cherries, my wonderful husband asked if I could spare a tablespoon of cherries. With 30 lbs to go through…what do you think my answer was? Haha, anyway, he made this amazingly refreshing summer cocktail utilizing fresh mint from our garden and cherries. Sooo good, I think i’ll have to set some cherries aside and keep dropping hints so he’ll make more.

Ingredients
- 2 Tablespoons Cherries and their juice 12 cherries to be exact
- 6-8 mint leaves
- 2 shot glasses full of rum
- 8 oz grapefruit juice
Instructions
- Divide cherries and mint between two glasses. Muddle cherries and mint at the bottom of the glass, fill the glasses with ice, slowly pour one shot glass full of rum per glass, then top with grapefruit juice. It will have pretty layers, you can keep it that way or stir it a few times and enjoy!
