Notes from this week’s meal plan:
Salad with Candied Nuts and/or Seeds Recipe
- This makes 6-8 side salads or 3-4 larger salads
Quick pickled eggs
- Quick pickling is refrigerator pickling
- This recipe is very vinegar forward
- Marinate for 1-2 days or eat them as soon as one hour after putting them in
Oven Baked Pork Roast
- A great, affordable dinner option for Christmas.
- Simple enough for a weeknight meal, but delicious enough for a holiday.
- Be sure to have a meat thermometer on hand because cook time will depend on the size of your pork and oven type. Internal temperature needs to be 145 degrees.
- When pouring sauce on top of roast, lift the roast so sauce goes underneath and pork doesn’t stick to pan.
- Once you’re done baking the pork, be sure to serve it alongside its juices so your guests or family can enjoy every bit of that tasty glaze.
Whole wheat honey oat flax bread
- A great recipe for breastfeeding Mom’s because of the flax and oat
- Before baking the bread, I like to brush butter on top (or spray with cooking spray) and sprinkle some oats on top
- You can use Active Yeast or Quick Rise Yeast, 1 packet = 2 1/4 teaspoons yeast
5 ingredient buffalo cauliflower nuggets
- These are technically an appetizer, but I think appetizers make for a great lunch.
- These can be made in an Air Fryer or stovetop.
