These 5 ingredient almond cookies are so easy to make and incredibly delicious. They’re the perfect bite size treat that isn’t too sweet, yet perfectly satisfying, and made with only 5 ingredients!
These may not be the fanciest cookie you’ve ever seen, but looks can be deceiving and, in this case, they certainly are! I love almond flavor and using it in recipes, like in these sprinkle cookies and this cake with almond buttercream.
A note about almond extract: a little goes a long way!!
What ingredients do you need to make these almond cookies?
- Butter
- Flour
- Sugar
- Almond extract
- Almond flour
Totally optional, but absolutely delicious – adding semisweet chocolate chips!
To start making these cookies, you will melt butter and my biggest tip is in this first step:
- Be sure to completely melt the butter!
This will help to ensure the dough isn’t too lumpy and comes together wonderfully.
As you’re making the recipe, you will notice that the dough will look crumbly, like in the photo above. You need to really use your hands to form the dough together before forming your cookie shapes – see an example in the picture below.
How to bake almond cookies
- Preheat oven to 350. Melt butter in microwave until fully melted – times will vary based on your microwave.
- With a hand or stand mixer beat butter and sugar until light and fluffy (about 2-3 minutes). Add flour, almond meal and almond extract. Beat until mixture comes together and forms a dough.
- Scoop dough using a 1.5 tbs cookie scoop or use hands and form into balls.
- Place on a cookie sheet (these are my favorite pans), about 2 inches apart. Use a fork to flatten tops of cookies or keep in a ball shape if you prefer.
- Bake for 12-15 minutes or until edges start turning golden brown.
- Remove from oven and allow to cool for 5 minutes. Transfer to a wire rack to cool completely.
I get asked a lot if these cookies can be gluten free. And while the original recipe is not gluten free, you can certainly make the recipe friendly for any one who may be gluten intolerant. All you need to do is use gluten free baking flour with a 1 to 1 ratio.
Can almond cookies be frozen/can you freeze almond cookies?
- Cookies can be stored in an airtight container at room temp for up to 5 days or in the freezer for up to 3 months.
To finish these 5 ingredient almond cookies, I’m sharing a completely optional step that I think makes them even that much better – chocolate! Simply melt semisweet chocolate chips, drizzle on top and allow to cool!
