Chocolate Chip Waffles with Strawberry Cream Cheese Sauce

If you’ve been following along for some time now, you certainly know how often I make eggless waffles in my house (hint-I make them weekly and freeze them so I always have homemade frozen waffles for the kids). Well, I’ve upgraded them a bit!  Enter, eggless chocolate chip waffles with strawberry cream cheese sauce.

Yes, the waffles in this recipe are amazing!  But the real star is the strawberry sauce.  All you have to do to make this delicious sauce is combine four simple ingredients:

  1. Frozen strawberries ( you can use fresh strawberries, but it will be less liquidy)
  2. Cream cheese
  3. Honey
  4. Vanilla extract

I make this recipe with eggless waffles, but you can, of course, use whatever your favorite waffle recipe is and just add chocolate chips!  No matter what waffles I am making, this is definitely the waffle maker I use every time.

Yes, these waffles quickly became a favorite of the kids, but I have to admit, they have also topped my list of favorite breakfast foods lately!  I mean, what is not to love about a chocolate and strawberry combination?

A few notes and tips about making these waffles:

  • When making the waffles, you can either use buttermilk or make your own!  Tvo make your own, you simply combine milk and lemon juice and let it sit for 5 minutes.
  • The recipe calls for using frozen strawberries.  The water content in the frozen berries will help the sauce be more liquid.  If you want to use fresh strawberries, the sauce will just be thicker.
  • The strawberry cream cheese sauce was originally inspired by one that Ben picked out of the Let’s Cook: Elmo Cookbook (a cute kids’ cookbook). It was a recipe for strawberry cream cheese stuffed French toast, but we didn’t have 1/2 the ingredients, so we made a sauce and waffles instead.

Eggless Chocolate Chip Waffles with Strawberry Cream Cheese Sauce

Equipment

  • Waffle Maker
  • Food processor

Ingredients

For the waffles

  • 1 cup milk or water or non dairy milk of choice*
  • 2 Tbs. lemon juice  (juice from 1 lemon)
  • 3 Tbs. canola oil or other mild cooking oil like grapeseed, vegetable or coconut oil
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract optional
  • 1 1/2 cups all-purpose flour
  • 1 1/2 Tbs. baking powder
  • 3 Tbs. sugar
  • 1/2 cup chocolate chips
  • 1 tsp. lemon zest

For the strawberry cream cheese sauce

  • 1 cup frozen strawberries blended
  • 8 oz. cream cheese
  • 2 Tbs. honey
  • 1 tsp. vanilla extract

Instructions

To make waffles

  • In a bowl combine milk and lemon juice and let sit for 5 minutes (this is essentially creating buttermilk, you could use buttermilk instead of this step). After 5 minutes add in canola oil, vanilla extract and almond extract (if using.)
  • In another bowl combine flour, baking powder, sugar, chocolate chips and lemon zest, stir to combine.
  • Pour wet ingredients into dry ingredients, stir, and let sit for 5 minutes (let the baking powder do its thing - the mixture thickens up a bit and bubbles a little.)
  • Warm waffle iron according to manufacture directions. I have this waffle iron and love it so much!
  • Spray heated waffle iron with cooking spray and spoon batter into waffle iron, cook until done (mine is about 5 minutes). Repeat until all waffles are made.

To make strawberry cream cheese sauce

  • Combine strawberries, cream cheese, honey, vanilla extract in food processor until smooth.
  • Pour over waffles and enjoy!

Notes

For the strawberry cream cheese sauce, you could opt to use fresh strawberries instead of frozen.  But if you do, the cream cheese sauce will not be as liquidy.
Waffle note:
*depending on what type of liquid you use, you may have to add a little extra liquid for the batter if the batter is too thick. For example, if you use whole milk, use an additional tablespoon to 1/4 cup water, or if you use a thicker milk (like buttermilk) you may need to use a little extra liquid.

    I usually don’t serve waffles or pancakes with any toppings at all. They’re “grab and go” handheld food at our house, but if it’s me eating them I love some natural peanut butter, cocoa powder, and TJ’s golden toasted flaxseed on top for crunch.

    I go with the classic butter and syrup, but what makes my waffles special is the heirloom waffle that dates from my grandparents’ wedding in 1926! I also make the syrup myself. My parents made this and I think of it as Depression Era home made syrup: Heat 1/2 cup white sugar, 1/2 cup brown sugar, and 1/4 cup water. Keep stirring and boil it until it goes from cloudy to clear. A little maple extract gives it a real nice flavor! It is thinner than the bottled brands, but it tastes great and is super cheap.

    The waffles look delicious, but as a diabetic, waffles & pancakes are not usually on my menus. I wonder if I could use almond four???? By the way, The frittata recipe is one that I will use.

    I like the classics – fresh unsalted creamery butter with real maple syrup. The lemon curd would be amazing but then I would eat waffles all day long! Yum!

    OMG, the best waffles topping is homemade lemon curd. But also, I had some waffles at a restaurant where they put cardemom on the toppings somehow. Not sure if it was in the syrup? SO GOOD.

    We make waffles almost every Sunday morning. I like to cut up mango and blueberries on my waffle, and then a dollop of yogurt.

    Waffles…Oh, how I love thee! My favorite topping is caramelized bananas, candied walnuts and maple syrup. I would say it closely resembles bananas foster!
