Perfect for a summer dessert, these chocolate pudding parfait cups are great for bringing along to parties, picnics, family dinners and anytime you’re in need of a super incredible dessert that everyone will love!

These chocolate pudding parfait cups are one of the most nostalgic recipes I’ve shared here on SweetPhi.com. Making chocolate pudding brings me back being in the kitchen with my German mother, learning how to cook.

The best chocolate pudding parfait cups you will eat with Lindt Chocolate

One weekend a month my mother would take my three sisters and I to this little specialty German/European grocery store. It had a chocolate section that was incredible and of course included Lindt chocolate. We would each get to pick out a little LINDOR truffle and would then go outside the store where they had a little seating area and would sit and ceremoniously open the crinkly wrappers to enjoy the amazing chocolate within.

We went to the store because in addition to having a huge Lindt chocolate selection (longtime fans, clearly), they also sold German magazines. To this day my mom gets German magazines and it’s beyond cute – she’ll write little notes and dog ear pages in ones she think I’ll like.  I grew up speaking German but then when we went to kindergarten and couldn’t speak English my parents decided it was time for more English around the house. I can still understand the language and can read and write at probably the level of a 2nd grader lol. The magazine always had recipes in them and we’d always try different ones out, it’s where I learned my love of cooking and trying new things out in the kitchen from.

I’ve been making homemade pudding for years and would just eyeball the ingredients going into the pot; one thing that always remains constant is the chocolate used: Lindt! I like using the Lindt EXCELLENCE line of chocolates – specifically the 70% cocoa chocolate. It gives the pudding an ultra smooth and delicious chocolate flavor. The quality of the chocolate really matters and makes the best pudding ever. Then for the crumble layers in the parfait cups I use the Lindt EXCELLENCE Intense Orange flavor which gives a hint of orange and those crumble layers – they really tie the parfait cups together and have a slightly soft crunchy texture.

Pudding cups are one of those things that everyone loves and that make for a super delicious dessert for family gatherings. They can also be made in a mason jar and then become easily transportable for picnics!

Ingredients

  • For the pudding:
  • 3 tablespoons cornstarch
  • 1/3 cup sugar
  • 2 ¼ cups milk 2% is what I use
  • ½ teaspoon vanilla extract
  • 4 oz. Lind EXCELLENCE 70% cocoa chocolate chopped
  • For the crumb layers:
  • 2 tablespoons butter melted
  • 4 graham cracker cookie rectangles
  • 2 squares .7 oz.Lindt EXCELLENCE Intense Orange chocolate

Instructions

  • Start by making the pudding.
  • In a medium sauce pot over medium-high heat, combine cornstarch and sugar and slowly pour in the milk, whisking as you pour. Cook for 5 minutes, whisking occasionally.
  • After 5 minutes turn the heat down to medium and continue cooking the mixture, still whisking occasionally, for 5 minutes or until it thickens and coats the back of a spoon. Remove from heat and whisk in vanilla extract and chopped chocolate. Let the pudding sit in the pot for 5 minutes before assembling the parfait cups.
  • While the pudding is cooling make the crumble layer. Melt the butter in a microwave safe bowl and set aside. Then in a food processor combine graham cracker cookies and Intense Orange chocolate squares. Pulsate until it forms a crumbly mixture (30 seconds). Pour contents into a bowl and slowly pour melted butter over the mixture. Stir until combined and a crumb mixture is formed.
  • To assemble the parfait cups spoon 1-2 heaping tablespoons of the crumb mixture into the bottom of 4 cups (or mason jars) so that the bottom is covered, then top with about 1/3-1/2 cup pudding, then sprinkle another spoon or two of the crumble mixture onto the pudding and spoon remaining pudding between the cups. Serve warm or cold. Store in the refrigerator.
