Chocolate Tofu Pie (The Ultimate Chocolate Fudge Pie)

I normally looooove any recipe that is a healthy adaptation of something, also, I looove blog posts from the Chocolate Covered Katie blogĀ , however, this recipe for ‘The Ultimate Chocolate Fudge Pie‘ was just not my favorite and I didn’t like it at all, took one bite and couldn’t eat anymore. My fiance on the other hand said, ‘this is good, i could eat this again’ so there you have it.

Recipe (original click here):

  • 1Ā package firm tofu
  • 1 tsp cocoa powder
  • 1 tbs pure vanilla extract
  • 3 tbs Skim Milk
  • 1/8 tsp salt
  • 1.5 cups chocolate Chips
  • 4 Tbs AgaveĀ or other sweetener

Directions:Ā Melt the chocolate (either on the stove or in the microwave), then throw everything into a food processor and blend until super-smooth. Pour into a pie crust if desired. (I used the pie crust I had left over from making pies). Put into the fridge for an hour minimum to cool. This gets firmer and firmer, the longer it sits. (It’s firmer if you use firm tofu and more like mousse pie if you use silken.)
