These fluffy buttermilk bunny pancakes are so cute and super easy to make! They’re perfect for spring and any time you want to add a little fun to your breakfast table. The fluffy buttermilk pancakes recipe is made with a few simple ingredients (only 6 ingredients in the pancakes!) and can be made made into fun pancake shapes (I make snowman pancakes in the winter!)
Pancakes are a staple in our house. You can make a batch ahead, freeze them and heat up for a quick breakfast. I have some great pancake recipes on the blog (like these or these), but none quite as fun as this one! This is my go-to, easy pancake recipes.
What ingredients do I need to make bunny pancakes?
- All-purpose flour – you could also use gluten-free flour
- Sugar – granulated sugar to give the pancakes sweetness, you could also use cane sugar
- Baking powder – to make the pancakes nice and fluffy
- Egg – large eggs are used for this recipe
- Vanilla extract – I like to use the good stuff for pancakes (and I’m heavy handed with vanilla extract)
- Milk and lemon juice – use this to make your own buttermilk. Or you can, of course, just use buttermilk!
- Decorative toppings – whipped topping, shredded coconut flakes, banana slices, chocolate chips
I never have buttermilk in my refrigerator, but it’s super simple to make your own. I just combine milk and juice from half a lemon (or just a wedge of lemon). If you don’t have a lemon, you can use a teaspoon of white vinegar. Let the mixture sit for 3-5 minutes and you’re all set!
How do you make fluffy buttermilk bunny pancakes?
- Heat a griddle or nonstick skillet over high heat.
- In a bowl, combine the flour, sugar and baking soda – mix.
- Make a well in the center (just indent with the back of your mixing spoon) and add the buttermilk and vanilla extract, crack the egg, stir from the center to break the egg yolk and continue to stir until only a few small clumps are left (a few small clumps are ok; don’t over-mix)
- Spray the griddle with cooking spray. Pour batter onto griddle in various shapes for bunny; feet, body, ears Cook for about 2-3 minutes on one side and then flip and cook for another 1-2 minutes.
- Repeat until all of the pancakes are made. Assemble on a plate like the reverse side of the bunny (these are bunny butt pancakes)!
- Add whipped topping with coconut flakes for tail. Add banana pieces and chocolate chips for bunny feet.
A few tips:
- You can add blueberries or chocolate chips into the batter for extra fun and flavor
- Add a teaspoon of vanilla if you want to get fancy
- Make your own buttermilk (as I mentioned above)
- To easily pour batter into bunny shapes, I just cut a hole in a Ziploc bag for a makeshift pastry bag.
- Let batter sit while skillet warms up. This helps the pancakes be fluffy in the end.
- Don’t forget to spray the pan/skillet with non-stick cooking spray
How to make bunny pancakes – toppings you need:
- Dollop of whipped cream or whipped topping (or butter) for tail.
- Coconut flakes for fluffy tail
- Banana pieces for feet
- Chocolate chips for feet nails
- This is a bunny butt, but you could alternatively do a bunny face and add little strawberry pieces to the ears.
