A light and fluffy almond meringue cake filled with whipped cream and fresh berries—like eating a summer cloud – this German strawberries and cream blitz torte will become a favorite!
We all have those recipes that stick with us—the ones that become birthday staples, summer go-tos, and “just because it’s the weekend” treats. For me, this Blitz Torte is one of those.
Years ago, Nick—my husband—found a recipe for a traditional German Blitz Torte on the site Quick German Recipes. He made it for me on my birthday, and I’m not exaggerating when I say I’ve requested it a dozen times since. It’s that good. Light, airy, just sweet enough, and layered with whipped cream and berries, it’s the kind of cake that feels both impressive and completely doable.
Blitz means “lightning” in German, and the cake lives up to its name—it comes together quickly, with minimal fuss, but tastes like something you’d get at a charming European café. You make two cake layers, each topped with a fluffy meringue and a scatter of sliced almonds. Bake them until golden and crisp, then fill with clouds of whipped cream and juicy strawberries (or raspberries… or both). That’s it. Simple, stunning, and so, so delicious.

Why You’ll Love This Recipe:
Surprisingly simple – The cake batter and meringue are made from pantry basics and come together fast.
Light and elegant – The airy texture makes it feel fancy without being heavy.
Perfect for any occasion – Ideal for birthdays, showers, or a summer barbecue.
Make-ahead friendly – You can bake the layers ahead of time and assemble right before serving.

Tips for Success:
Separate eggs carefully – The meringue depends on no yolks sneaking in, so take your time with this step.
- Use clean whisks – Make sure your whisks are completely clean before beating egg whites.
Whip it good – Get those egg whites to stiff peaks for that signature meringue crunch.
Cool completely – Let the layers cool fully before assembling to keep the cream from melting.
Use stabilized whipped cream if needed – A touch of whipped cream stabilizer, cornstarch, cream cheese, or instant pudding mix can help the whipped cream hold up longer, especially on warm days. This Dr. Oetker whip it whipped cream stabilizer is a fave of ours!

Customizations:
Filling swap – Traditionally, some versions use a pastry cream or custard filling. We usually stick with whipped cream, but both are dreamy. Here the recipe with the custard filling.
Berry mix – Strawberries and raspberries are our favorite combo, but blueberries, blackberries, or even sliced peaches would be delicious.
Nut variations – Almonds are classic, but you could use chopped hazelnuts or leave the nuts off altogether for a smoother top.

This is the kind of cake that makes people close their eyes when they take a bite. It’s simple, nostalgic, and a little magical. Whether you’re making it for a celebration or just a Tuesday afternoon pick-me-up, I hope you love it as much as we do.
Let me know if you try it—I always love hearing when a recipe becomes part of someone else’s tradition too.
