- Shortening
- Light brown sugar
- Dark molasses
- Egg white
- Vanilla
- All-purpose flour
- Baking soda
- Baking powder
- Salt
- Ground cinnamon
- Ground ginger

How do you make these cookies?
- Beat shortening, brown sugar, molasses, egg white and vanilla in a large bowl at high speed with a hand or stand mixer until smooth.
- Combine flour, baking soda, baking powder, salt and spices in a small bowl. Add to shortening mixture; mix well.
- Cover; refrigerate until firm, about 8 hrs or overnight.
- Pre-heat oven to 350. Line cookie sheets with parchment paper or grease them. Roll dough on a floured surface to 1/8 inch thickness.
- Cut into desired shapes with cookie cutters. Place on prepared cookie sheets.
- Bake 8 to 10 minutes or until edges being to brown. Remove to wire racks, cool completely.
I mean, how adorable are these little animals!? One important note is that these cookies need 8 hrs (or overnight) cooling time in the refrigerator for the dough to firm up. They will spread a little when baking, so plan accordingly!
