This gingerbread cut out cookies recipe is a great one to make with kids.  My favorite part about these cookies is that they have a nice flavor but are not overpowering.

Not every kid loves gingerbread cookies, but they will love these ones because of how mild they are!  Plus, this recipe is a great way to use any extra molasses you have in your pantry.

What ingredients do I need to make gingerbread cut out cookies?

  • Shortening
  • Light brown sugar
  • Dark molasses
  • Egg white
  • Vanilla
  • All-purpose flour
  • Baking soda
  • Baking powder
  • Salt
  • Ground cinnamon
  • Ground ginger

I love cooking with the kids in the kitchen.  Yes, it can get messy, but it’s such a fun way to involve them and actually accomplish a task while we’re at it.  Plus, they love sneaking bites along the way!

The best part about this gingerbread cut out cookie recipe is that you can use any cookie cutters you have on hand.  We used ones like this, but Christmas shapes would be perfect this time of year.

How do you make these cookies?

  1. Beat shortening, brown sugar, molasses, egg white and vanilla in a large bowl at high speed with a hand or stand mixer until smooth.
  2. Combine flour, baking soda, baking powder, salt and spices in a small bowl. Add to shortening mixture; mix well.
  3. Cover; refrigerate until firm, about 8 hrs or overnight.
  4. Pre-heat oven to 350. Line cookie sheets with parchment paper or grease them. Roll dough on a floured surface to 1/8 inch thickness.
  5. Cut into desired shapes with cookie cutters. Place on prepared cookie sheets.
  6. Bake 8 to 10 minutes or until edges being to brown. Remove to wire racks, cool completely.

I mean, how adorable are these little animals!?  One important note is that these cookies need 8 hrs (or overnight) cooling time in the refrigerator for the dough to firm up.  They will spread a little when baking, so plan accordingly!

  • KitchenAid® Artisan Stand Mixer
  • Electric hand mixer
  • Glass bowls

Ingredients

  • 1/2 cup shortening

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1/3 teaspoon ground ginger

This recipe makes about 2 1/2 dozen animal cut out cookies.  Quantities will vary based on cookie cutters used.
