The biggest thing i’m missing going Gluten Free is all the baking and sweets I have to avoid! I came up with this recipe for Gluten Free Coconut Chocolate Chip Cookies, they’re quite tasty.

Ingredients
- 1 stick butter
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 cup shredded coconut
- 1/2 cup Gluten Free All Purpose baking flour
- 1 cup chocolate chips
Instructions
- Preheat oven to 350. In a microwave safe bowl melt butter for 45 seconds. Stir in sugars and vanilla extract and mix with a wooden spoon. Next stir in egg, and baking soda. Next add in the GF flour and the shredded coconut. When everything is combined, fold in the chocolate chips.
- Line cookie sheet with parchment paper, and roll dough into 1 inch balls, keeping 2 inches between the cookies (they spread out while baking). Bake for 12-15 minutes, keep in mind once they turn brown on the edges it's time to take them out! Let cool on cookie sheet for 5 minutes then transfer to a cookie cooling rack.

Maybe there’s something I did wrong, but I believe I followed the recipe. Definitely a lot of space on the pan is needed, as the instructions state. I could’ve used more than two inches between cookies, though. They all blended together into one huge cookie. The texture was more like candy, not cookies. I reduced the sugars some, added half the chocolate chips, but still too sweet to me. I’m confused as to why the recipe calls for melted butter, when most call for softened. I will try this again with softened, not melted butter, half the sugars, and see how it turns out.
